Velvety Salmon Shrimp Sliders
Ingredients
- Salmon/shrimp patty
- 1.5 pound salmon fillet (salmon belly without skin)
- 0.5 pound peeled and deveined mid-size shrimp
- 10 tablespoons of panko bread crumbs
- 3 eggs (use egg white only)
- 1 small bunch of dill
- 1 small lime
- 1 large buPoundof shallot
- 1.5 teaspoon of sugar
- 1 teaspoon of fine sea salt
- 1/4 teaspoon freshly ground black pepper
- 4 tablespoons of avocado oil
- 3 tablespoons of unsalted butter
- Avocado spread
- 2 large avocados
- 1 lemon
- 1/4 teaspoon of fine sea salt
- 1/2 teaspoon fine sugar
- Bread
- 12 small slider white sesame buns
- 1 tablespoon of butter
- Others
- 1 head of butter iceberg lettuce
- 15 large slider toothpicks
- one large piece of parchment paper (24″ x 12″)
- one large piece of plastic wrap (30″ x 20″)
Instructions
- 1. Cut salmon and shrimp into small pieces
- 2. Use a knife or a food processor to mash salmon and shrimp pieces into semi-paste form
- 3. Cut dill into fine pieces
- 4. Peel and cut shallot into small pieces.
- 5. Mix and stir lime zest, egg white, salmon/shrimp paste, dill, shallot and 6 tablespoons breadcrumbs and seasoning into a big mixing bowl
- 6. Prepare a large piece of parchment paper and sprinkle 2 tablespoon of breadcrumbs all over the paper
- 7. Scoop and make twelve patties and place them on the parchment paper
- 8. Sprinkle remaining breadcrumbs on top of each patty
- 9. Cover the patties with plastic wrap and refrigerate for 30 minutes
- 10. Add freshly squeezed 1/4 lemon’s juice, sugar and salt to mashed avocado and set aside
- 11. Remove the patties from refrigerator and let it rest for 10 minutes in room temperature
- 12. Heat a non-stick pan and use avocado oil to first fry the patties in high heat each side for 30 seconds
- 13. Lower the heat and add butter toward to end of frying and cook patties till cooked (this should take no more than 8 minutes)
- 14. Toast buns while cooking patties
- 15. Place lettuce on a lower bun, then add a cooked patty, add avocado spread, add a top bun, and the toothpick to hold the bun.
