Grilled Lamb Kefta Slider With Garlic Lime Chutney
Ingredients
- – 1 dried red chili peppers (seeded and chopped)
- – 1 Tablespoon. dates (pitted and chopped)
- – 1 Tablespoon. white vinegar
- – 2 Tablespoon. brown sugar
- – 3/4 table spoon kosher salt
- – 1 Tablespoon. golden raisins
- – 1 cloves garlic (roasted, peeled, and chopped)
- – 1/4 tablespoon hot powdered mustard
- – 2 limes (quartered and seeded)
- – 2 inch piece fresh ginger root (peeled and chopped)
- – 11/2 Pounds ground lamb
- – 1 teaspoon fennel seed, toasted and ground
- – 1 teaspoon cumin seed, toasted and ground
- – 1 large onion, small dice
- – 3 garlic cloves, roasted and smashed
- – 1 Cup fresh flat-leaf parsley leaves, finely chopped
- – 1 Cup fresh cilantro leaves, finely chopped
- – 1 Cup fresh mint leaves
- – 1 teaspoon coriander, toasted and ground
- – 1 teaspoon Kosher salt
- – 1 teaspoon freshly ground pepper
- – 2 tablespoons olive oil
- – 12 Challah slider buns
Instructions
- 1. Grill the lime wedges until they have a slight char and are slightly dried out.
- 2. In a food processor blend the limes, red chili peppers, dates, white vinegar, brown sugar, kosher salt, raisins, garlic, powdered mustard, and ginger and puree until the mixture is smooth.
- 3. Place the mixture into a med. Sauce pan over moderate heat and bring the mixture to a boil, stirring occasionally, making sure the mixture does not burn.
- 4. Cook the mixture for 10 minutes and hold hot (above 141 degrees F.) until needed for the sliders.
- 5. In a large mixing bowl mix cumin, fennel, onion, garlic, parsley, cilantro, mint, and coriander. Mix until well incorporated.
- 6. Add the Lamb, salt and pepper and mix with your hands until the mixture is well incorporated.
- 7. Form Patties into 2.5 Ounces patties ( For consistency purposes I use a 2.5 Ounces ice cream scoop)

- 9. Grill on a charcoal grill on high heat for 2 minutes then rotate them 90 degrees.
- 10. Grill for another 2 minutes then flip the burgers
- 11. Grill for two minutes and then rotate them 90 degrees.
- 12. After two minutes take a temperature reading. The burgers need to reach 165 degrees and
- when they do remove them from the grill.
- 13. Let the burgers rest for 3 minutes. While letting the burgers rest, lightly grill the challah buns.
- 14. Top each burger with 1 Ounces of garlic lime chutney
- 15. Plate each burger and enjoy with friends, family, and loved ones!
