You Gyro Me Crazy Burger
I love a good gyro, but I also love a good burger. So why can't you have your favorite dishes cooked on the grill as a juicy burger? Well there is no reason, so I created this tasty version of a gryo.
Minted Olive Oil
Â¼ cup olive oil
5 fresh mint leaves, minced
1 medium English cucumber, peeked and finely chopped
8 ounces of plain Greek yogurt, drained
1/8 teaspoon salt
3 garlic cloves, minced
Â½ tablespoon olive oil
1 tablespoon red wine vinegar
2 Â¼ pounds ground lamb
Â¼ cup Merlot
1 medium onion, chopped
3 garlic cloves,minced
1 Â¼ teaspoons dried marjoram
1 Â¼ teaspoons dried rosemary, freshly crushed
Â½ teaspoon salt
Â½ teaspoon freshly ground pepper
6 ounces feta, crumbled
3 packages pizza crust (Pillsbury Classic preferred)
6 ounces of feta, crumbled
1 small tomato, seeded and diced
1 small red onion, diced
12 slices of English cucumber, peeled cut (should be about 5 inches in length, sliced lengthwise)
To make the minted oil, pour the olive oil in a small bowl. Add the mint and stir and set aside.
To make the tzatziki sauce, place the chopped cucumber in a tea towel and squeeze to remove the juices. In a medium bowl, combining the yogurt, cucumber, salt, garlic, olive oil, and vinegar. Stir gently and set aside covered in cooler until ready to assembly.
To make the patties, combine all of the ingredients in a large bowl and mix together well while handling the meat as little as possible; this prevents it from becoming too dense. Divide the mixture into 6 equal portions and form into rectangle patties roughly 3 x 5 x Â¼ inch. Cover with plastic and refrigerate until ready to grill.
To make the flat bread, unroll one package of pizza dough onto a cutting board. Shape to approximately 12 x 20 x 1/2 inch rectangle. Sprinkle half the dough with 2 oz of crumbled feta and spread to coat. Then fold the dough over to form a 6 x 10 x Â¼ inch rectangle. Cut the dough into 4 pieces, roughly 3 x 5 inches each. Press the edges of each piece to seal them. Repeat this step with other two packages of pizza dough.
Prepare the diced tomato and cucumber slices. Quarter the tomatoes and remove the insides then roughly dice the skin. Cut the cucumber to about a 5inch length. Peel the cucumber and slice lengthwise using a mandolin to get 12 slices. Set aside until assembly.
Heat the grill to medium-high. When the grill is ready, brush the dough and the burgers with mint olive oil. Place the patties on the grill and cook until done to preference, 4 to 6 minutes per side. Do not push down on the patty because this will release the juices and dry out the burger and brush the dough and burgers with mint oil before flipping. Make sure to move the dough often so it doesn't stick to the grill. The burgers should be cooked through and the dough a golden brown on the outside and tender yet firm on the inside. Remove the burgers and flatbread from the grill.
To assemble the burgers, top 6 pieces of flatbread with a patty and 2 slices of cucumber each. Top the remaining flatbread with desired amount of tzatziki sauce (2 spoonfuls should do) and spread to cover the flatbread. Add desired amount ( no more than 1 tablespoon of each) of the diced tomato and red onion to the sauce side of the bread. Combine the two halves and slice on a diagonal before serving.
