White Bean Chicken and Chili Burgers
A hearty burger made with no red meat.
2lbs ground chicken
1 15.5 oz can Great Northern Beans(drained)
2 cloves garlic minced
2 tblsp. fresh cilantro chopped
2 tsp. white pepper
1/2 med size yellow onion finely chopped
2tsp. Kosher salt
1 egg beaten
1cup Italian style bread crumbs
Colovita olive oil
1 ripe avacado
1/4 tsp. fresh lime juice
2 tblsp. Real Mayonaise
1/8 tsp. black pepper
6 bakery department Kaiser Rolls
2 lrg. Tomatoes
Vegetable oil for brushing
Drain beans and place in a large bowl. Mash with fork. Add chicken, garlic, cilantro, white pepper, cumin, onion, salt, olive oil, bread crumbs and egg. Mix all ingredients well with hands form a ball and refrigerate for 1 hour. In a seperate bowl, Scrape Avacado out of shell( pit discarded ) Add Mayonaise,lime and black pepper.Mash until it is spreadable.Cover and refrigerate until ready to use. Remove chicken mix from the refigerater and form into 6 equal patties. Brush both sides with vegetable oil. Heat grill 10 min. on med. Place patties on the grill close the lid. After 2 min. open and rotate the patties 1/2 turn for cross char marks. Close lid. Cook for 2 more min. and flip the patties. close lid cook for 2 min. open grill and rotate 1/2 turn for cross char marks. Close lid cook for 2 more min. Take off the grill. Approximate cook time is 8 min. Place Kaiser rolls on the grill until lightly toasted. Remove and spread a generous portion of the Avacado spread on the cut side off roll. Add sliced tomato and place on patty between the buns. Eat!!!!!
