Wasabi / green tomato burger with Avacado Dressing

Ingredients

3 Pounds Ground Chuck
3 Minced Fresh Garlic Cloves
¼ Cup Sutter Home Merlot Wine
2 Teaspoons Sea Salt
2 Teaspoons Black Pepper
2 oz Grey Poupon Mustard
1 Tablespoon Wasabi
2 Large Green Tomatoes sliced into 6 equal portions
Avocado Dressing
4 large California Avocados
½ cup Mayonnaise
1 teaspoon sugar
2 tablespoon vinegar
Colavita oil for brushing grill & rolls
6 Large Soft Kaiser rolls

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium – high. To make patties, combine the beef, garlic, wine, salt, pepper and Grey Poupon and wasabi in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and form the portions into patties to fit the rolls. Brush the rack with Colavita Olive Oil, place the patties on the rack, cover and grill until browned on the bottoms, 4 to 6 minutes. Turn the patties and continue grilling until done to preference, about 5 to 6 minutes, longer for medium. During the last few minutes of cooking, brush the remaining oil evenly over the cut side of the rolls. Place the rolls on the outer edge of grill rack; cut side down, to toast lightly. To make Dressing; in food processor, place peeled California Avocado’s, Mayonnaise, sugar and vinegar. Blend thoroughly. To assemble the burgers, carefully place the burger on the bottom half of the roll, add 1 slice of tomato on top of each burger, spread equal parts of the dressing on the top half of roll.
