Walnut Chicken Burger with Spicy Honey Sauce, Brie and Grilled Apples

Imagine sipping a lighter Merlot. This fresh, pale-pink wine is a nice change from traditional red or white wines.

Ingredients

2 pounds freshly ground chicken (white and dark meat)
3/4 cup finely ground walnuts
2 teaspoons salt
1/2 cup honey
3 TBS Sutter Homer Pinot Grigio
1/2 tsp. cayenne pepper
2 large Granny Smith apples
6 croissants, split
3 TBS olive oil
4 ounces of Brie Cheese, divide into 6 equal pieces

 

Instructions

Preheat the gas grill to medium-high.
In a large bowl, add your ground chicken, ground walnuts, and salt. Mix gently but thoroughly, being careful not to overwork the mixture. Form the mixture into 6 patties. Set aside to let rest.
In a small bowl, whisk together the honey, Pinot Grigio and cayenne pepper. Set aside until ready to grill burgers. Core and stem apples before slicing each one into 6 quarter-inch slices. Place on the hot grill and cook on each side for 1 minute. Remove and keep warm until ready to assemble burgers.
Put your burger patties on the preheated grill over direct heat. Cook burgers for a total of 5-6 minutes per side, basting regularly with the spicy honey sauce. A few minutes before the burgers are cooked thoroughly, brush the inside of your croissants with olive oil and put on the grill to toast slightly. One minute before removing burgers from grill, top each patty with brie cheese. Close grill lid to melt brie. When everything is ready, assemble your burgers – place a patty on each roll topped with 2 slices of grilled apple and finish with top of croissant. Enjoy!
