Twist Of Italy Burger

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Ingredients

Butter (1 Stick)
Fresh Sweet Onion (2 Large)
Fresh Mushroom (2 LBS) Triple Washed and Sliced
Ground Round (3 LBS)
Mids Meat Tomato Sauce
Fresh Smoked Mozzerella Cheese (2 Braids)
Salt Pepper
Oil to grease the grill and for frying.
Eggs (2)
Parmesan Cheese (1 1/2 Cups)
Grated Fresh Large Basil Leaves (24)
Large Fresh Baked Rolls (6)
Parmesan Cheese (1Cup) Shredded

 

Instructions

Prepare grill to medium-hot. Sautee Mushrooms and Sweet Onions in seperate covered fire safe pans with butter in each pan. Sautee for approxiamately 10-12 minutes stirring both ingredients occasionally so that they do not burn. When both ingredients are finished remove from grill and place both in individual covered fire-safe dishs. While Sauteeing; Divide Ground Round into even portions. (6) Split portions in 1/2 and flatten into round or square shapes depending on choice of roll. Prepare Tomato Sauce so that it is ready to spoon into place. Cut Smoked Mozzerella into medium thick slices. Each burger consists of a top and bottom pattie that will be combined to make one. On the first pattie place a TBL spoon or more of sauce and spread evenly. (Stay approx. 1/2" from edge of burger.) Then place sliced Smoked Mozzerella evenly on top of sauce. (Stay approx. 1/2" from edge.) Cover Smoked Mozzerella with another TBL spoon or more of sauce. (Stay approx. 1/2" from edge.) Place second pattie on top of contents and first pattie. Place in hand shape and seal edges of both patties together. (Finish all patties the same.) Salt and pepper burgers to taste. Brush oil onto grill rack. Place burgers on a medium-hot grill covered, flipping only once after approxiamately 7-10 minutes. While grilling Burgers; Prepare egg wash in a bowl. Prepare 1 1/2 cups of grated parmesan cheese in a bowl. When burgers are finished place in a covered fire-safe dish. Place fire-safe pan on grill with oil for frying over a medium-hot grill. Dip cleaned and dried Fresh Large Basil Leaves into the egg wash and then into grated parmesan cheese coating entire leaf. Then place into hot fry pan, turning them over briefly so that they do not burn. Remove them from the pan when finished and place on a paper towel or napkin to soak up residual oil. Slice open rolls and place cut edge only down on grill to toast. Place the bottom half of toasted roll onto serving plate and cover with sauteed onions. Then place burger onto sauteed onions and sprinkle burger with shredded parmesan cheese. Add a generous amount of sauteed mushrooms on top of burger . Place 4 basil chips on top of sauteed mushrooms. Finally cover all ingredients with toasted top of roll and serve.
