Tur-Duc-Ken Burgers w/ Creole Mayonnaise

My grandmother was from New Orleans and she could cook up some wonderful Creole food.All my memories of her are in the kitchen measuring spices using the palm of her hand and whistling as she cooked for us. I had been trying to come up with recipe for a Cajun style burger.It hit me one day when I passed by a Tur-Duc-Ken in the freezer section of my grocery store.I thought of my grandmother and the spices she used and came up with this yummy burger.Enjoy!!

Ingredients:

Patties:

5 oz. ground duck meat

5 oz. ground chicken meat

20 oz. ground turkey meat

1/4 cup panko bread crumbs

1 egg white

1/4 cup grated yellow onion

1/4 cup red bell pepper,finely chopped

1 tsp. fresh thyme,chopped

1/4 tsp. cayenne pepper

1 tsp. creole seasoning

2 cloves garlic peeled,minced finely

Creole Mayonnaise:

2/3 cup mayonnaise

3 tbs. creole mustard

1 tsp. fresh thyme,chopped

1/4 tsp. black pepper

1 tsp. creole seasoning

zest of 1 lemon

*2-3 tbs. vegetable oil for greasing grill rack

6 white split buns

6 large leaves red tip lettuce

6 slices roma tomatoes

Instructions:

Prepare a gas grill to a medium heat with a cover or heat a gas grill to medium-hi.

In a large bowl place the ground duck,chicken and turkey meats,add panko bread crumbs,egg white,grated onion,chopped red bell pepper,thyme,cayenne,creole seasoning and minced garlic.Mix gently until combined.Shape into 6 equal sized patties .Set aside.

In a medium size bowl combine the mayonnaise,creole mustard,thyme,black pepper,creole seasoning and lemon zest.Mix well,chill.

Brush heated , prepared grill rack with vegetable oil. Place patties on hot grill rack.Cover and cook for patties 6-7 minutes,flip patties ,cover and cook for 6-7 minutes longer for medium .Remove patties from grill, place patties on a platter and cover with foil,set aside ,keep warm.

Place buns around the outer part of the grill cut side down for 1-2 minutes to toast slightly,remove buns from grill and assemble burgers.

Assembly:Lay buns down cut side up.Spread 1-2 tbs. of creole mayonnaise over cut side of each of the 6 top and bottom buns.Place a lettuce leaf and tomato on each of the 6 bottom buns,top each tomato with a pattie.Cover each pattie with a top bun cut side down.Serves 6.
