Tropical Spicy Burger with Sweet Potatoes, Avocado and Spicy Mayonnaise

Ingredients

1 cup mayonnaise
1 teaspoon hot sauce
1 teaspoon Pickapeppa Sauce,
1/2 cup + 4 Tablespoons Canola Oil
1 large sweet potato, peeled and julienne cut into "matchsticks"
2 1/2 teaspoons Kosher salt
6 slices pepper bacon
2 pounds 80/20 ground chuck
1 teaspoon PickaPeppa Sauce
1 teaspoon cumin
2 cloves fresh garlic, diced
1 teaspoon black pepper
6 Kaiser Rolls
1 stick salted butter, softened
2 large heirloom tomatoes, cored and sliced into 1/2" thick slices
3 large ripe avocados, peeled, pitted, slice each avocado into 8 lengthwise slices

 

Instructions

To make the Spicy mayonnaise, combine the mayonnaise, hot sauce and Pickapeppea Sauce; blend with a mixer and refrigerate until the burgers are assembled. To prepare the sweet potatoes, heat the gas grill to high. Add 1/2 cup canola oil to a grill safe skillet. When the oil is hot, add the sweet potatoes. Reduce heat to medium and let the potatoes fry for 2 minutes. FLip potatoes and fry another two minutes or until golden brown. Move potatoes to a plate lined with paper towels; let cool 2 minutes then sprinkle with 1/2 teaspoon of the salt. To prepare the bacon, adjust grill heat to medium high. Add the pepper bacon to a grill safe skillet; fry the bacon for 3 minutes on each side or until crisp. Remove bacon to a plate lined with paper towels and cool for 2 minutes. Dice the bacon. To make the hamburger patties, place the ground beef in a large glass bowl. Add the bacon, cumin, garlic, remaining 2 teaspoons salt and the pepper. Mix the meat gently until the added ingredients are blended. Divide the meat mixture into 6 equal portions and shape into patties to fit the rolls. Brush the grill rack with remaining 4 Tablespoons canola oil. With the grill still at medium high heat, place the burgers on the grill rack. Grill 3 to 4 minutes until browned; flip burgers and grill about 4 minutes for medium well, or until desired doneness. To prepare the rolls, when burgers are 2 minutes from being done, split the Kaiser rolls in half. Spread 1 teaspoon butter on the cut sides of each roll. Place the cut side of the Kaiser rolls on the outside edge of the grill rack to toast lightly, about 1 minute. To assemble the burgers, spread one teaspoon of mayonnaise mixture on each cut side of the rolls. On each roll bottom, place a burger, a tomato slice, 4 slices of avocado, 1/4 cup of the fried sweet potatoes, then the roll top. Serve immediately.
