Triple B Burger Bison burger with Buffalo mozzarella, fresh Bruschetta and pesto mayonnaise

I wanted to use bison in my burger because of its great taste and low fat qualities. Although the bison is a much closer relative to the cow than to the water buffalo, Caprese salad is one of my summer favorites, especially when made with buffalo mozzarella. Ingredients:

Bruschetta
2 cups seeded roma tomatoes, chopped
2 cloves crushed garlic
2 tablespoons Colavita Extra Virgin Olive Oil
2 tablespoons fresh basil, chopped
½ teaspoon kosher salt

Bison Burger
2 pounds ground bison
¼ cup finely diced red onion
¼ cup Sutter Home Cabernet Sauvignon
1/8 teaspoon kosher salt
1/8 teaspoon pepper

Pesto mayonnaise
¼ cup mayonnaise
2 tablespoons of your homemade or a purchased pesto

½ pound Buffalo Mozzarella, divided into six portions

6 Maier’s Italian Crustini Rolls or favorite hamburger buns
2 tablespoons Colavita Extra Virgin Olive Oil

6 leaf lettuce leaves

Instructions:

Prepare patties at least one hour before grilling. To make patties, place ground bison in a bowl and add onions, wine, salt and pepper. Mix well with a spoon. Working quickly divide meat mixture into 6 portions, form each portion into a ball and place each ball on top of a sheet of plastic wrap. Fold plastic wrap over the top of the ball leaving a couple of inches on each side. Place a plate on top and push down forming a patty that is about 1 inch thick and 4 inches across. Fold plastic wrap tightly around patty smoothing edges. Repeat with remaining 5 patties and refrigerate until ready to grill.

Combine diced, seeded roma tomatoes, crushed garlic, and chopped basil. Add olive oil and salt. Set aside, do not refrigerate.

Mix mayonnaise and pesto together and refrigerate until needed for assembly.

Preheat grill to medium high. Bison does not contain a lot of fat, it is best to cook it hot and fast. Brush grill with canola oil. Place patties on the grill, cover grill and cook turning once. Cook about 5 on each side for medium done. Place a slice of cheese on each patty and cook another minute or so until cheese is melted.
