The Wapaquessett Burger

Ingredients:

3 pounds 85% lean ground beef
2/3 cup A-1 Steak Sauce
1 teaspoons ground black pepper
1 teaspoon of salt
2 large sweet onions
1/4 cup Olive oil
2 tablespoons Butter (salted)
¾ pound fatty pastrami
6 deli slices Swiss cheese (3 ½ inch squares)
6 Kaiser Rolls
12 tablespoons of Thousand Island dressing

Instructions:

Place ground beef in a large bowl.
Pour in 1/3 cup of A-1 Steak sauce and kneed together until well mixed.
Then add another 1/3 cup A-1 Steak sauce and kneed again.
Mix thoroughly, cover and set aside.

Peel and slice onions in thin half moon slices.
Pour 1/4 cup olive oil and 2 tablespoons of butter in a frying pan suitable for use on a grill.
Add 1 teaspoon pepper and 1 teaspoon of salt to pan.
Place pan on grill, add olive oil, butter and onions.
Sauté onion in pan on grill using medium heat (350 degrees) stirring often. Onions are done when they are brown and caramelized. Approximately 30 minutes.
Remove onions and cover with tin foil.

Shape burgers into 6 six ounce patties.
Place burgers on the grill. Cook for 12 minutes turn every three minutes on a medium high grill (350-400 degrees)

While burgers are cooking add pastrami to frying pan with onions and place back on grill.

Place one piece of swiss cheese on each burger when there is one minute to cook. Let cheese melt and remove burger from grill.

Assemble burger:
Place one tablespoon of Thousand Island dressing on bottom bun. Add onions 1/6th of the onions and 1/6 th of the pastrami to the bottom bun (approximately 3 slices). Place the burger with cheese on top. Put one tablespoon of Thousand Island dressing on the top of the bun and serve. Repeat these steps for the remaining five burgers.
