The Thanksgiving Burger

Ingredients

Sauce:
4 oz cream cheese
4 oz Cran-Fruit orange and cranberry sauce
1/4 tsp ground mustard
1/2 tsp horse radish
1/2 tsp dried herbes de provence
salt and pepper
Stuffing:
1/2 cup corn bread stuffing mix
3 tbl chopped onion
3 tbl chopped green apple
4" piece of celery chopped
1/2 tsp chopped fresh sage
1/2 tsp chopped fresh parsley
1/2 tsp chopped fresh thyme
1/2 tsp each salt and pepper
1/2 cup white wine
Burger:
2 1/2 lbs lean ground turkey
6 tbl chopped onion
2 tbl chopped fresh sage
2 tbl chopped fresh parsley
2 tbl chopped fresh thyme
2 tsp salt 1 tsp black pepper
2 tbl white wine
6 brioche rolls
butter
watercress
endive

 

Instructions

For the sauce, combine the cream cheese, cranberry sauce, ground mustard, horse radish and herbs until mixed. Check the flavor and add salt and pepper to taste. Chill until needed. In a bowl, add the stuffing mix, onion, apple, celery, sage, parsley, thyme, salt and pepper. Lightly toss to combine, then pour over the white wine. Toss again and allow to sit to moisten the stuffing. Start the charcoal. Mix together the turkey, onion, sage, parsley, thyme, salt, pepper and wine. Form six round patties. Remove part of the center of each burger and fill cavity with 1 1/2-2 tbl of stuffing mixture. Replace the burger meat and seal the burger closed. Split the brioche rolls and butter them on both sides. Select a nice tuft of watercress and 3-4 endive leaves for each burger and set aside. When the coals are ready, pour the coals onto one side of the grill. Sear each turkey burger on both sides then remove to the cooler portion of the grill. Grill for several minutes a side, covered, until burger is cooked through or reaches an internal temperature of 165. Remove turkey burgers and briefly toast the brioche rolls. To assemble, generously spread the cream cheese sauce onto both sides of the brioche roll. Place the burger on the roll and top with the watercress, endive and the other roll half. Happy Thanksgiving!
