The Seriously Sharp Cheddar Cheeseburger With Cabernet Sauvignon Sauce

Ingredients

1 tablespoon extra virgin olive oil
2 tablespoons salted butter
1 medium size vidallia onion thinly sliced
2 medium size portobello mushrooms sliced 1/4 inch thick
1 1/2 cups Sutter Home Cabernet Sauvignon wine
1 pound 80% lean ground beef
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
vegtable oil for brushing on the grill rack
3 oz seriously sharp Cabot Cheddar cheese. 3 slices 1 oz each
3 sesame seed rolls split

 

Instructions

Prepare a medium hot fire in a charcoal grill with the cover on or preheat a gas grill to mediun-high. To prepare the sauce, In a medium sized skillet over medium high heat, heat oil and butter. Add onions and mushrooms. Saute until soft and slightly browned. Add wine and reduce by half over high heat. Keep warm on very low heat until ready to serve. To prepare the patties, shape ground beef into 3, 1/2 inch thick patties seasoning on both sides with a dash of salt and pepper. When grill is ready brush grill with vegtable oil and cook patties to desired preference turning once. Top with cheese while still on grill to melt cheese.
