THE KONA BRUNCH BURGER WITH SWEET ONION AND PINEAPPLE JAM

Ingredients

Sweet onions and pineapple jam
3 Vidalia onions, peeled quartered, and sliced into thin crescents
4 Tablespoons unsalted butter
¼ Cup light brown sugar
1Tablespoon Red wine vinegar
1 Tablespoon Honey
1 cup fresh pineapple cut into ¼ inch cubes
1 zest of a large orange
Patties
½ Cup Roasted Kona coffee beans
¼ Cup Black Peppercorns
2 Tablespoons Course Kosher Salt
1 Pound of ground sirloin
1 pound ground chuck
2 Tablespoons merlot
Vegetable oil for grilling
6 Sandwich size Thomas English muffins

 

Instructions

Prepare a medium hot fire in a charcoal grill with cover or preheat a gas grill to medium high heat (approximately 350 degrees). To make onion pineapple jam, allow 15 minutes for preparation and 25 minutes for actual cooking time. Place onions in a large sauce pan add butter, brown sugar, vinegar and honey. Cover, and cook over medium grill heat for about 15 minutes until onions are tender. Uncover, and add pineapple and orange zest stirring occasionally until onions and pineapple mixture are browned and caramelized about 10 minutes. Take off grill they may be served warm or at room temperature. To make patties allow 25 minutes for preparation and approximately 10 minutes for cooking (depending favorite degree of doneness). Coarsely crush coffee beans and peppercorns in a blender. The bits should be no larger than a large grain of rice. Place mixture in a shallow dish and add salt and stir together to combine and set aside. Place ground sirloin and ground chuck in a bowl add wine and mix well. Divide meat into 6 portions and shape into patties. Then place patties one at a time in the coffee mixture coat both sides of the burger with a thin uniform layer pressing lightly so that it sticks to the burger. Brushes grill rack with oil. Place the patties on rack, covered and grill Until burgers are nicely crusted on bottom 3-4 minutes. Turning patties and continue grilling to your favorite degree of doneness on the inside. In the last few minutes of cooking place English muffins cut side down, on grill rack and grill until lightly toasted and remove. To assemble place hamburger on bottom of English muffin, giving a generously portion of onion pineapple jam followed by English muffin top.
