Cabernet Sauvignon

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

Ingredients:

1 large ripe avocado
3 tablespoons coarse chopped fresh blueberries
Juice from 1 lemon
1 tablespoon extra virgin olive oil

3 pounds ground chuck
6 cloves minced garlic
3 ounces finely chopped dark chocolate
4 ounces crumbled feta cheese
1/4 cup Cabernet Sauvignon wine
1/2 teaspoon black pepper

12 slices 100% whole wheat cinnamon raisin bread
2 cups fresh spinach leaves
4 roma tomatoes sliced into wheels, 1/2 inch thick
1 red onion thinly sliced

oil for brushing on grill

Instructions:

Preheat a gas grill on medium.

To make the spread, halve the avocado, remove the seed and scoop it into a food processor. Add the blueberries, lemon juice, and extra virgin olive oil. Puree into a smooth spread and set aside.

Prepare the patties by placing the ground chuck in a large bowl. Add the garlic, chocolate, feta cheese, wine and pepper. Mix until all ingredients are incorporated but do not over mix. Form into 6 equal sized patties slightly larger than the bread, pressing in slightly in the middle.

When grill is ready, brush on the oil. Place the burgers evenly spaced and cook for approximately 6 minutes on the first side, flip and cook for 5 more minutes. While burgers are cooking, prep the sandwiches as follows:

Spread one side of each of the 12 slices of raisin bread with equal portions of the avocado spread. Add spinach leaves to 6 of the slices. As soon as burgers are done place patties on top of the spinach leaves to slightly wilt the spinach. Top burgers with onion slices and tomato wheels. Place another slice of raisin bread with avocado spread on top. Secure with toothpicks, cut in half, and enjoy.
