The Great Southwest Chipotle Cheeseburger with Chipotle Mayonnaise and Avocado Corn Salsa

Ingredients

2/3 cup mayonnaise
1 seven oz. can chipotle peppers in adobo sauce, divided
1 tsp. adobo sauce from can of chipotle peppers in adobo sauce
2 limes, divided
4 tsp. kosher salt, divided
Vegetable oil for brushing grill rack
3 ears of corn, shucks and silk removed
1 large red onion, divided
2 jalapenos, seeded and minced
1/3 cup chopped cilantro
2 ripe California avocados
2 1/4 lbs.80% lean ground chuck
6 thick slices Monterey Jack cheese
6 large potato hamburger buns

 

Instructions

Preheat grill to medium-high To Make the Chipotle Mayonnaise: Combine mayonnaise, 2 chipotle peppers seeded and minced, 1 tsp. adobo sauce, 1/2 tsp. lime juice and 1/8 tsp. kosher salt in a small bowl. Mix until well blended. Cover and refrigerate until serving. To Make the Avocado Corn Salsa: Brush the grill rack with vegetable oil. Place corn on grill and turn every 2 minutes until corn is lightly browned on all sides. Remove from grill and let cool. Meanwhile, in a medium size mixing bowl, mix 1/2 large red onion finely chopped, minced jalapenos, 2 Tbsp. lime juice, chopped cilantro, and 1 1/2 tsp. kosher salt. After corn has cooled cut kernels off cobs and mix in with salsa mixture. Cut avocados in half lengthwise and remove pits. With soup spoon scoop avocado flesh from shells and chop. Gently fold chopped avocados into salsa mixture. Taste salsa for seasoning and add more salt if needed. Cover and refrigerate until serving. To Make the Burger Patties: Combine ground chuck, 1/2 large red onion grated, 4 chipotle peppers seeded and minced and 1 1/2 tsp. kosher salt in a large mixing bowl. Use portions and form into patties. Make the patties 1/2 inch large in diameter than the buns. The patties will shrink while cooking. Brush grill with vegetable oil. Place patties on grill and grill with grill top open for 4-5 minutes until browned on bottom. Flip patties and grill with cover down until cheese is melted. During the last few minutes of cooking split the buns and place cut side down and toast lightly. Remove patties and buns from grill and place on platter. Now you are ready to assemble burgers. To Assemble Burgers: Remove chipotle mayonnaise and avocado corn salsa from refrigerator, spread a generous amount of the chipotle mayonnaise on the cut sides of both the tops and bottoms of the buns. Place the burger patties, cheese side up, on the bun bottom. Add a heaping spoonful of avocado corn salsa to cover top of patty, cover with bun tops. Serve and enjoy! Makes 6 burgers.
