The Black and Blue Burger

Pairs well with:

White Merlot

Imagine sipping a lighter Merlot. This fresh, pale-pink wine is a nice change from traditional red or white wines.

Ingredients

1 lb. of ground beef
1 lb. of ground chuck
1 10 once package of frozen chopped spinach [defrosted and drained]
2 eggs
3/4 of a cup of Italian breadcrumbs
1/2 a cup grated Parmesan cheese
1/2 a cup chopped onion
2 table spoon of Worcestershire sauce
1 teaspoon of garlic salt
1 teaspoon of garlic pepper
1 cup of Gorgonzola cheese
1 cup of blackened seasoning [chef Paul Prudhommes]
1/2 teaspoon of McCormick Montreal seasoning
6 ciabatta rolls toasted
1 tablespoon of thousand island

 

Instructions

1. add ground beef, ground chuck, spinach, eggs, breadcrumbs, Parmesan cheese, onions, Worcestershire sauce, and garlic salt and pepper.

2.mix lightly.

3.divide mixture into 6 generous patties.

4.split patties open and add a generous portion of Gorgonzola cheese and seal closed pinching edges.

5.in a small bowl add blackened seasoning. roll each burger to coat entirely. place on cookie sheet.

6.sprinkle each burger on each side with Montreal seasoning. pat lightly.

7. preheat grill to medium high. lightly wipe with oil. grill the burgers about 6 to 8 minutes. ones side at a time to 160 degrees. toast Ciabatta on top rack of grill.

8.spread Ciabatta with thousand island dressing. add the burger.
