Gewurztraminer

Ingredients

Topping:
3 sticks of Butter, salted
1/2 cup Brown sugar
3 Apples, red delicious, cored, chopped
3 medium Onions, Vidalia
Patties:
2 lbs. Ground turkey
2 tsp. Sea salt, fine ground
2 tsp. Coarse black pepper
1/8 tsp. Sage
1 tsp. Thyme
1 1/2 tsp. Parsley
Vegetable oil for brushing on the grill
6 Hamburger buns, large, deli style
12 leaves of Leaf lettuce
1 16 oz can Whole berry cranberry sauce

Instructions

Prepare a medium hot fire in a charcoal grill with a cover.

To make the topping: Over the white coals, on the rack, in a cast iron skillet, melt the butter and brown sugar. Add the apples and onions. Sauté until they are slightly soft, about 4 minutes. Drain and set aside.

To make the patties: Add the salt, pepper, sage, thyme, and parsley to the meat. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and form the portions into patties to fit the buns.

Brush the grill rack with vegetable oil. Place the patties on the rack, cover and cook, turning once until done to preference. 5-7 minutes on each side for medium.

To assemble the burgers, on each bun bottom, place 2 leaves of lettuce to make a bed for 2 Tbsp. apple/onion mixture and 1 Tbsp. cranberry sauce, 1 patty. Add the bun tops and serve.
