Thanksgiving on a Bun


5 large cloves garlic, peeled
1/4 cup finely chopped onion
2 Tables. fresh sage, finely chopped and divided
2 lbs ground turkey
1 egg
1/8 teaspoon salt
1/8 teaspoon pepper
1 cup fresh whole wheat bread crumbs
4 teaspoon orange zest
1/3 cup whole berry cranberry sauce
1/4 cup fresh orange juice
1 Tablespoon Dijon mustard
1/2 cup mayonnaise
1 Tablespoon olive oil
6 homemade hamburger buns
3 cups baby greens


In an oiled vegetable basket on grill heated to medium-high, grill garlic 3-4 minutes, or until golden brown. Set aside. Make patties-in a large bowl, combine 2 cloves grilled garlic (minced), onion, 1 tablespoon sage, ground turkey, egg, breadcrumbs, and orange zest. Mix to combine, but do not over handle. Form into 6 patties. Refrigerate until ready to use. To make glaze, combine cranberry sauce, orange juice and mustard in small bowl. On oiled grill grate heated to medium-high, grill burgers, 6-8 minutes per side, basting with cranberry glaze during cooking. Grill until burgers browned on both sides and until they have a nice glaze on them. During last part of grilling, toast buns, cut side down until lightly browned. To prepare aioli, whisk remaining 3 cloves garlic (minced) in small bowl with remaining tablespoon sage and mayonnaise. Gradually whisk in olive oil until smooth. To assemble, spread aioli on both top and bottom of roll. Top bottom portion of roll with burger and top burger with portion of fresh greens. Serve immediately.
