This burger blends flavors synonymous with Texas.Beef is the main ingredient on the menu in the majority of Texan households. With the addition of the chipotle, the heat factor comes into play, which is another Texas staple. This burger will send your taste buds on a trip from Napa to the plains of Texas.

Ingredients:

2 lbs Sirloin Steak (Cubed)
1 lb Bacon (Crumbled)
1 Tblsp spoon salt
1 Tblsp spoon black pepper
1 Tblsp spoon cumin
Olive oil
1/3 cup roasted garlic
1 lb Sharp Cheddar Cheese (sliced 1/4 inch thick)
1 1/2 cups Real Mayo
1 bunch chives (chopped fine)
1 can chipolte peppers (drained and chopped coarse)
1 head Romaine lettuce
1 Medium Red Onion (sliced thin)
2 Tomatoes (sliced thin)
6 ciabatta rolls

Instructions:

Cube meat into one inch cubes, then place in food processor and grind until the meat reaches the consistency of ground beef. Add salt, black pepper, cumin, crumbled bacon and cheese to meat and mix by hand until spices, bacon and cheese are incorporated. Mix mayonnaise, chopped chipotle peppers, chives and roasted garlic together to make the topping. After mixing place in refrigerator for at least 20 minutes to allow time for the flavors to infuse. Take approximately 1/3 pound of beef and roll it into a ball. (The ball should fit nicely in the palm of your hand) Flatten the meat out until it is about 1 inch thick. Repeat this step until you have 6 patties. Grill meat over medium high heat approximately 4 1/2 to 5 minutes on each side until they are medium or 150 degrees. While the meat is cooking cut the ciabatta rolls in half and drizzle them with olive oil. Place rolls face down on grill for 1 minute or until toasted. After the rolls are toasted take a spoonful of the chipotle/garlic mayo and spread it across the top of the roll. Once the meat is finished cooking allow it to rest for 5 minutes and then place it on the bottom half of the roll. Add 1 piece of lettuce, 2 slices of tomato, and 1 slice of onion. Serve immediately.
