Texas State BBQ Burger

Ingredients:

Caramelized Red Onions

1 Red Onion

olive oil for brushing the onion

Patties

2 pounds ground chuck

¼ cup sweet and tangy BBQ sauce

t tablespoon brown sugar

½ teaspoon powdered mustard

½ teaspoon salt

½ teaspoon course ground black pepper

olive oil for brushing the grill rack

6 poppy seed buns

olive oil for bushing the buns

12 slices dill pickles

BBQ Lime Mayo

3 tablespoons Hellman’s low fat mayonnaise

1 teaspoon fresh lime juice

3 tablespoon sweet and tangy BBQ Sauce

Instructions:

Preparation Time: 30 minutes

Cooking Time: 20 minutes

Directions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.

To make the patties, place ground chuck in a large bowl. Add BBQ sauce, brown sugar, powdered mustard, salt, and pepper and mix gently, not to over mix. Divide mixture into 6 equal portions and form patties.

Brush the grill rack with olive oil. Place the patties on the rack, cover and grill 4 – 5 minutes. After placing patties on the grill, slice onion into ¼ inch slices and brush each with olive oil and place on grill with patties. While patties cook on the first side, brush inside of each roll grouping with olive oil and set aside. Turn patties and continue to grill until cooked to preference, approximately 5 minutes for medium cooked burgers. Turn onions as well. As soon as patties are turned, place poppy seed buns on outer portion of the grill rack, open side down to slightly toast.

Remove poppy seed buns from grill and place plate open. Place one burger on each bottom bread section and then place a slice of the caramelized onion on top of the burger.

Mix mayonnaise, BBQ sauce, and lime juice and place scoop on each burger.
