Texas Poblano Chicken Burger

This wine is bursting with crisp, refreshing fruit flavors like apple, pear, and melon, making you want to swing your legs off a dock at sunset.

There is nothing better than Tex Mex food and I feel this burger is a great example on how Tex Mex can be incorporated into a wonderful burger.

Ingredients:

“Black Bean, Avocado, salsa”
1 can of Black Beans, rinsed and drained
1 large Hass Avocado, pitted and chopped
1 small Red Onion, diced
1 large Ripe tomato, seeded and diced
1 bunch of Fresh Cilantro, chopped ( reserve 2 tablespoons for patties)

“Patties”
2 pounds Ground Chicken
1 large Roast Poblano pepper, Seeded and diced
1 clove of garlic, minced
2 tablespoons fresh cilantro leaves
2 tablespoons cumin
2 teaspoons red pepper flake
1 tablespoon kosher salt
1 tablespoon ground chipotle pepper
1/2 cup blue corn tortilla chips, crushed
2 tablespoons fresh lime juice
1/2 teaspoon fresh ground black pepper

Vegetable oil, for brushing on the grill
6 Soft Kaiser rolls, split
1 clove of garlic, to rub on kaiser rolls
3 tablespoons melted butter to brush on rolls
6 romaine lettuce leaves
6 slices of pepper jack cheese

Instructions:

In a medium size bowl combine, rinsed and drained black beans,cubed hass avocado, diced red onion, dice tomato and cilantro. Mix gently and set aside.

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat gas grill to medium heat.

To make the patties, combine the ground chicken, diced poblano peppers,garlic, cilantro reserved from the salsa,cumin, red pepper flake,kosher salt, ground chipolte pepper, blue corn tortilla chips, lime juice and black pepper. Mix together and divide into 6 portions. Form patties to fit rolls.

When grill is ready brush on vegetable oil. Place patties on grill and cover. Turn burgers once, until done 4 to 5 minutes per side.
During the final minutes on the grill add the pepper jack cheese. Rub kaiser rolls with garlic and brush with butter. Toast the kaiser rolls on the grill until lightly browned. Remove rolls from the grill.

To assemble burger place one patty on each kaiser roll bottom , add 2 tablespoons of black beans, avocado salsa to each burger, then add 1 romaine lettuce leaf to each burger. Place top on burger and serve.
