Texas Hold -Um Gucamole Burgers

Ingredients

Preheat a gas grill to medium high heat.
GUCAMOLE:
2 avocados
1 samll onion
2 tomatoes
2 fresh jalapenos seeds removed
2 tablespoons chopped fresh cilantro
2 limes
1 tablespoon salt
Patties:
2 pounds ground chuck
3 tablespoons worcestershire sauce
2 tablespoons steak seasoning
1 teaspoon cumin
2 chipotles in adobo sauce chopped
3 tablespoons adobo sauce
1 tablespoon vegtable oil
2 tablespoons salt
1 tablespoon black pepper
1/2 cup vegtable oil fro brushing the grill
6 slices of large beefsteak tomato
6 slices sharp chedder cheese
12 slices texas toast

 

Instructions

Cut avocado, onion,tomatoes,jalapenos into chunks.Place in a food processor and pulse a couple of times. Add cilantro, sqeeze both lime into mixture, add salt and pulse util smooth. Cover and chill while making the patties. In a large mixing bowl add ground chuck, worcestershire, steak seasoning, cumin, chipotles, adobo sauce, oil, salt and pepper. Handling the meat as little as possiable, mix well. Divide mixture 6 portions and make patties to fit the texas toast. Brush the grill rack with oil, place on grill rack, cover and grill 5-6 minutes each side or until meat thermometer says 160 degrees. During the last few minutes of cooking add the cheese slices to the patties and brush both side of the Texas toast with the oil and place on the outer edges of the grill until toasted lightly. To assemble the burgers, add the pattie on top of one piece of the Texas toast, add a generous amount of gucamole, a slice of tomatoe add the remaining toast pieces,and yee-ha you have got a Texas style burger.
