Texas Beef Burgers with Lime and Red Onion Topping

White Merlot

Imagine sipping a lighter Merlot. This fresh, pale-pink wine is a nice change from traditional red or white wines.

Ingredients

BURGER INGREDIENTS
3 5" green onions, very finely chopped
1/4 cup fresh coriander, finely minced
2 tablespoons prepared salsa
1 teaspoon Cajun seasoning
1 teaspoon table salt
1/2 teaspoon freshly grouned black pepper
1 pound ground chuck
1 tablespoon vegetable oil to grease grill
TOPPING INGREDIENTS
1 cup red onion, about 1/4 inch dice
2 tablespoons chopped fresh coriander
1 teaspoon lime rind, freshly grated
2 tablespoons lime juice, freshly squeezed
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 kaiser buns or good quality hamburger buns, split in half

 

Instructions

Heat grill to medium high heat. In medium sized bowl combine green onions, coriander, salsa, Cajun seasoning, salt, and pepper. Add beef and mix together well but gently. Brush vegetable oil on grill, and cook burgers 4-5 minutes per side until medium well doneness. Instant read thermometer should read 160F. degrees. During last minute of cooking place place buns on grill to toast. While burgers are cooking make topping. In small bowl combine onion, coriander, lime rind and lime juice. Add oregano, salt and pepper. Adjust seasonings if needed. To assemble and serve burgers, place a bun bottom on serving plate. Add some topping, then place burger on top of onion mixture, add more topping mixture to top of burger and top with other half of bun. Serve immediately. Makes 4 servings.
