Taste of New Orleans

We enjoy pairing different ingredients into old favorites. This burger is spiced up with Andouille sausage and sharp cheese. This is not your mamma's cheeseburger.


4 oil packed sundired tomatoes,drained
1/2 cup mayonnaise
1 tbsp whole grain Dijon mustard
8 oz andouille sausage
2 lbs ground chuck
1/2 large red onion minced
2 tsp salt
2 tsp pepper
1 tsp fennel seed, crushed
6 large sesame seed hamburger buns
6 thick slices red onion
olive oil
1 cup coarsely grated Asiago cheese
17.5 oz jar roasted red peppers drained


Prepare med-high coals in charcoal grill or preheat gas grill to medium heat.
In food processor combine sundired tomatoes, mayonnaise and mustard, blend until mixed well. Transfer to bowl and keep cool until ready to serve.
Place sausage in food processor and chop until fine, transfer to large bowl. Mix ground chuck, minced onions, salt, pepper and fennel. Stir until blended. Form 6 patties.
Brush buns with olive oil and grill until golden, about 2 minutes. Transfer to platter. Brush onion slices with oil. Sprinkle with salt and pepper. Grill until golden about 7 minutes per side. Grill burgers until desired doneness. Sprinkle cheese on top of burgers.
Spread inner sides of bun with mayonnaise mixture. Top bottom bun with burger, red pepper, then onion slice, cover with top bun and serve.
