Tamarind Pineapple Turkey Burger with Guacamole, Caramelized Onions, & Chipotle-Lime Sour Cream

Hard to pronounce yet easy to drink, this wine combines lychee fruit and white peach flavors with a hint of spice.

My wife wanted a great tasting Turkey Burger that was not dry and tasteless.This recipe I created even surprised myself, a beef lover.

Ingredients:

For turkey patties:

3 lbs. ground turkey

1 Tablespoon salt

1 Tablespoon olive oil

1 tamarind pod or 1 Tablespoon prepared tamarind concentrate

¼ cup water

½ teaspoon smoked paprika

1 Tablespoon minced garlic

¼ cup apple cider vinegar

¼ teaspoon liquid smoke

½ small pineapple

¼ teaspoon black pepper

¼ cup Panko breadcrumbs

For Chipotle Sour Cream:

½ cup sour cream

1 lime, juiced and zested

½ teaspoon dry chipotle powder

For Guacamole:

1 ripe avocado, peeled, pitted, and chopped

1 Tablespoon red onion, cut into small dice

1 teaspoon jalapeno pepper, minced

½ lime, juiced

½ teaspoon kosher salt

1 Tablespoon fresh cilantro leaves, minced

¼ teaspoon fresh garlic (minced)

1 package Kaiser Buns

1 Vidalia onion

2 cups spring mix

Instructions:

If using tamarind pod, take outer shell of tamarind pod and place in a small sauce pan with water and apple cider vinegar on low heat, letting the pod steep for about 15 minutes. If using tamarind concentrate, mix the concentrate with the water and vinegar on low for 15 minutes. Remove from heat and strain through a fine strainer.

Remove outer skin from pineapple and remove the core. Using a blender or food processor, puree half of a small pineapple.

In a medium mixing bowl knead together turkey, salt, olive oil, tamarind liquid, smoked paprika, garlic, liquid smoke, pineapple puree, black pepper, and Panko breadcrumbs. Form into 6-8 patties. Heat a grill to medium high for about 10 minutes turning once, until internal temperature is 165 degrees F.

In a small mixing bowl mix together ingredients for guacamole and refrigerate until ready for use. In a separate bowl mix together the sour cream, lime juice, lime zest, and chipotle powder, refrigerate until ready for use.

Cut onion into strips and heat a sauté pan on medium high heat. Add 1 Tablespoon olive oil to pan and sauté onions for about 5 minutes. Add sugar and heat another 2-3 minutes.

Assemble Burgers by placing caramelized onions, spring mix, and guacamole on the bottom bun. Top with turkey burger and spread sour cream on the top bun.
