Sweet N Sassy Burgers with a Sweet Ginger Mayo

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Ingredients

Sweet Ginger Mayo
3/4 cup of mayonaise
1 1/2 tablespoon finely chopped green onion
2 tablespoons grey poupon
1 tsp. orange zest
1 tsp. soy sauce
1/2 tsp. fresh ginger
Sassy Sauce
3/4 cup grape jelly
1/2 cup chili sauce
1 tbs soy sauce
Burger Patties
1 lbs ground chuck
1 lbs ground sirloin
1/3 cup minced onion (sweet like Vidalla or Maui)
1/3 of a cup of shredded carrots
3 tbs zinfadel
1/8 tsp ground cinnamon
1 egg 3 tablespoons panko
1/4 tsp. hot salt
1/4 ground pepper
6 Sesameseed Hamburger Buns
olive oil for brushing on the grill rack

 

Instructions

Prepare a medium-hot fire in a charcoal grill with cover, or if you prefer preheat a gas grill to medium-high heat. To make the Sweet Ginger Mayo combine all the ingredients in a small bowl, cover and keep chilled. To make the Sassy sauce combine all the ingredients in a fire-proof sauce pan and set on the outer edge of the rack and warm the sauce until well blended. Set to the side this will be used for brushing the burgers while they cook. To make the burgers combine the meat, onion, carrots, wine, cinnamon, egg, panko, salt and pepper in a large bowl. With your hands, mix it all together, but try to not handle the meat very much so as to prevent compacting it and drying it out during cooking. Divide the mixture into 6 equal portions and form into 6 burgers patties that will fit your buns. When the grill is ready, brush the grill rack with the olive oil. Place your burger patties on the rack and brush your Sassy Sauce over the burgers, cover and cook, only turning once. When you turn it the one time brush the other side with the Sassy sauce, any extra sauce can be used to brush burgers right before you assemble them. When the burgers are cooked to your preference, probably 6-8 mins each side should do the trick, remove them from the grill and stack to keep warm. Place the hamburger buns cut side down on the outter edge of the grill rack to toast. To assemble the burgers, brush the Sassy Sauce over the top of the burger patties and the bottom bun. Spread the Sweet Ginger Mayo on the cut side of the top bun. On each bun bottom, place a burger and top with a roll top and serve.
