Sweet Heat Burger

Top Sirloin stuffed with Pepperjack Mole, with a Apple-Chipotle BBQ sauce and topped with fresh Red Leaf lettuce, sliced Roma Tomatoes and homemade Dill Pickles slices. All inside a toasted Baguette bun.


12 Top Sirlion Patties
1 tsp Cayenne Pepper
4 Tbs Salt
6 Roasted Jalepeno Peppers
2 C Monterey Jack Cheese, Shredded
1/2 Red Onion (Carmalized w brown sugar)
2 Dry Roasted Chipotle Peppers, Diced
1/2 Golden Delicious Apple, Diced
2 Tbs EV Olive Oil
1 Large White Onion, Minced
1/4 C Dark Brown Sugar
1/3 C Molasses
1 tsp Cumin
1 tsp Cinnamon
1 bunch Red Leaf lettuce
8 Roma Tomatoes
24 Fresh dill pickles, rounds
1 Baguette


1. Mince Red Onion and Carmelize with Brown Sugar. 2. Dice Jalepeno and Shred Monterey Jack 3. Place Onion, Jalepeno and Cheese in Food Processer. 4. Fill Burgers with stuffing via injector. Season with Cayenne and Salt. 5. Chill for 1 hr. 6. Prepare Sauce. 7. Grill Burgers 8. Put sauce on Burgers 9. Slice and Toast Baguettes 10. Top with Red Leaf Lettuce, Roma Tomato triangles and Dill Pickle Slices. 11. Serve


Apple-Chipotle BBQ Sauce 1. Prepare Tomato concesse 2. Heat EVOO in small sauce pot 3. Sweat White Onion 4. Mince Apple and Chipotle 5 Add Dark Brown Sugar, Cinnamon, Cumin, Molasses 6. Stir . Bring to a boil. Simmer for 45 min. to 1 hr. Stir occasionally.
