Sweet and Smokey BBQ Gouda,Cheddar Burger with Portobellos

Patties
2 lbs. ground chuck
2 teaspoons salt
1 tablespoon smoked sweet paprika
1 cup chopped purple onion
1 egg
2 teaspoon liquid smoke
Vegetable oil, for brushing on the grill rack
6 Sourdough buns
½ cup butter
Colavita Extra virgin olive oil
3 Portobello mushrooms caps
6 thin slices of Gouda
6 thin slices of smoked cheddar
½ cup honey BBQ

 

Instructions

Directions Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To make the patties, combine the ground chuck, salt , paprika , onion , egg , liquid smoke. Gently mix to combine the ingredients. Divide the mixture into 6 equal portions and form the portions into patties . When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once, until done to preference, 5 to 7 minutes on each side for medium. During the final minutes of grilling the patties, split the buns ,butter and put on grill to warm. Brush mushrooms with EVOO and put on grill. Transfer the patties onto a platter and top with a slice of each cheese. To assemble the burgers spread BBQ sauce on each toasted bun ,top with cheese covered burger , add grilled Portobello , drizzle on more BBQ sauce and serve.
