Surf and Turf Burger


1 medium onion, sliced
4 Tablespoons of butter - to carmelize onions
salt and pepper to taste
3 pounds ground chuck
3 tsp. salt 2 pounds cooked jumbo lump crab meat
Cooking oil to coat grill rack
6 ounces of soft goat cheese
1 Tablespoon chopped fresh chives
1 tsp. chopped fresh parsley
1 tsp. fresh lemon peel, grated
1 tsp. fresh lemon juice
1/4 tsp. freshly cracked black pepper
6 Kaiser rolls sliced
6 tsp. butter - to spread on rolls
6 slices of fresh avocado


1. Pre-heat gas grill to medium-high heat. 2. Using a non-stick fry pan, carmelize onion slices in butter over direct heat from grill. Add salt and pepper to taste. 3. In large mixing bowl, combine ground chuck with salt. Mix well. Prepare 12 quarter pound beef patties. 4. In seperate bowl mix crab meat with carmelized onions. 5. Spread six patties on wax paper and place 1/6 of crab meat mixture in the center of each patty. 6. Place remaining 6 patties on top and pinch edges all around making 6 stuffed burgers. 7. Grease grill rack with oil. 8. Place burgers on rack, close cover and grill 5-7 minutes per side, turning only once. 9. Meanwhile, in a clean bowl, soften goat cheese with wooden spoon. Add chives, parsley, lemon peel, lemon juice, pepper and salt. Stir until combined. 10. Cut Kaiser rolls in half and spread 1/2 tsp. of butter on each inside potion. 11. Gently place each roll, buttered side down, on the edges of the grill rack and toast lightly. 12. To assemble burgers, place one stuffed patty on each bottom roll and add avocado slice. Spread goat cheese mixture on inside of top roll and place on top of avocado. 13. Serve immediately and enjoy.
