Surf & Turf Burger

After watching Build a Better Burger on the Food Network channel, I decided I would enter the contest. I work as a paramedic and use cooking as a stress release. I come from a large family and food was always a gathering. Cooking allows me to be creative and lets my family, friends and co-workers to enjoy my creations. I decided to use the foods my family most enjoys which is beef, seafood, and condiments. So the follwing recipe is what I created and it is my entry for your contest.


1 cup mayonaise
1 tbsps horseradish
1 tsp of seasoning salt
4 large white onions
4 tbsp margarine
1/4 tsp salt
2 4oz cans sliced mushrooms
1 8oz New York strip steak
18 medium fresh shrimp (peeled & deveined)
1 tsp garlic powder
3 lbs ground beef (70/30)
1 Packet Ranch Fiesta Mix
2 tbsp seasoned bread crumbs
6 Fresh seeded hard rolls
12 slices Sharp cheese
cooking spray


In small bowl mix mayo, horseradish, and seasoning salt, chill. Peel and slice onions, place in frying pan with 2 tbsp margarine, simmer appxoximately 5-7 minutes, add honey and salt, continue simmering for approximately another 5 minutes on medium heat, when carmelized remove from heat. Open and drain mushrooms place in another frying pan with remaining margarine, cook on medium heat for approximately 5-7 mins. or until browned, remove from heat. Sprinkle each side steak with 1/2 tsp garlic powder, place on oiled grill over medium heat, cook approximately 8-10 minutes on each side or until internal temp reaches 160*. Spray with cooking spray and sprinkle shrimp with remaining garlic powder, place on skewers and grill for approimately 3-4 minutes on each side or until pink, while cooking steak. While steak and shrimp are cooking, place ground beef into large bowl, sprinkle in fiesta mix and add bread crumbs, mix well. Form into 12 equal patties, slice steak into 18 thin strips, place 3 strips each on 6 of the burgers, then place 3 grilled shrimp on top of steak, place the remain 6 burgers on top and pinch edges closed, to form a stuffed burger. Then place on oiled grill on medium heat, cover burgers with a foil tent, turn as needed, cooking until well done, approximately 15-18 minutes or internal temp reaches 170*. When burgers are done place sliced rolls on grill to toast, low heat 1-2 minutes or until toasted. Return carmelized onions and mushroom back on grill to warm. Place cheese on burgers until melted. Remove buns from grill, spread top and bottom of buns with horseradish sauce, place stuffed burgers on top, divide camelized onions and mushrooms on top or each burger, cover with top bun, cut in half, serve immediately and enjoy.


My sister and I had some laughs and stress while writing this, we had written everything but the comments and our computer lost everything, while we almost lost our whits!
