Sunset Turkey Burger

I wanted to create a healthy, low-fat, low-calorie, whole-wheat family meal for the grill with a southwest flair!

Ingredients:

Burgers:

One pound lean ground turkey
1/2 cup frozen sweet yellow corn kernels (sautéed in olive oil)
1/2 cup chopped red onion
1/3 cup chopped green bell pepper
17 whole-wheat ritz crackers (crushed)
1 egg
2 tablespoons minced garlic
1-tablespoon olive oil
2 teaspoons cumin
1/2-teaspoon kosher salt
1/2 teaspoon ground black pepper
1/2-teaspoon chipotle powder

Spread:
1/2-cup light mayonnaise
½ teaspoon old bay seasoning
½ teaspoon limejuice
¼ teaspoon cumin
¼ teaspoon chipotle powder

1 heirloom tomato
1 avocado
6 whole-wheat hamburger rolls
6 slices of Swiss cheese

Instructions:

Spray a small pan with non-stick olive oil cooking spray; add 1/2 tablespoon olive oil and heat to medium-high. Add frozen sweet yellow corn kernels and sauté, turning occasionally until golden brown. Remove from heat and reserve.

In a large bowl combine turkey meat, sautéed corn, red onion, green pepper, crushed ritz, 1 egg, garlic, remaining olive oil, cumin, salt, pepper, chipotle.

Mix all ingredients well, and shape into 6 patties.

Cook on grill heated to 400 degrees for approximately 7 minutes per side (or until done- turkey must cook through)

Toast each whole-wheat hamburger bun on top grill rack until lightly toasted- remove

Top each burger with Swiss cheese and cook until melted

Mix together mayo, old bay seasoning, limejuice, cumin and chipotle powder.

Spread mix onto the top of each toasted bun

Place burger on bottom bun, top each burger with one slice of tomato and 3 slices of avocado (or equivalent amount of tomato slice, depending on how you slice the avocado)
