Sumo Yumm-o Turkey Burger With Citrus-Wasabi Mayonnaise and Peanut Asian Slaw

This alternative burger is unique, healthful and delicious. By incorporating a lot of fresh vegetables and lean ground turkey, the result is a delicious and nutritious burger you can feel good about feeding your family. The secret ingredient being peanut butter (how american is that) is slightly unusual but adds a wonderful taste-you’d never know it/it leaves you saying: “what is that taste?”

Ingredients:

Peanut-Asian Slaw Dressing:
6 Tablespoons sesame oil
4 Tablespoons canola oil
8 garlic cloves, thinly slices
2-in piece ginger, minced
4 scallions, thinly sliced
1 1/2 teaspoons red pepper flakes (to taste)
1/2 cup soy sauce
1/2 cup tamari
1/2 cup seasoned rice vinegar
3 Tablespoons brown sugar
2 Tablespoon honey
1 teaspoon wasabi powder

Peanut-Asian Slaw Veggies:
1 cups red cabbage, thinly sliced
5 cups green cabbage, thinly sliced
1 1/2 cups cucumber, diced
1 1/2 cups carrots, diced
2 scallions, thinly sliced
2/3 cup lightly salted peanuts, chopped

Citrus-Wasabi Mayonnaise:
1/2 cup prepared mayonnaise
1 Tablespoon plus 1 teaspoon lime juice
1 3/4 teaspoon wasabi powder

Sumo Yumm-o Turkey Burgers:
2 1/2 lb. ground turkey
2 scallions, thinly sliced
1/2 cup carrots, minced
2 teaspoons red pepper flakes
1/3 cup chunky peanut butter
3 garlic cloves, grated
2-in. piece ginger, grated
2 Tablespoons seasoned rice vinegar
2 Tablespoons soy sauce
2 Tablespoons Tamari
2 eggs, beaten
2 teaspoons wasabi powder
3/4 cups panko breadcrumbs

Sesame Seed Buns:
6 sesame seed buns, toasted

salt and pepper, to taste
canola oil, for grilling

Instructions:

Peanut Asian Slaw Dressing:
Place 6 Tablespoons sesame oil and 4 Tablespoons canola oil in a saucepan over med-high heat. (When almost smoking) add garlic slices, and saute stirring constantly 1 minute (when garlic begins to get golden) then add scallions, ginger and red pepper flakes- continuing to cook another minute, stirring consistently. Remove saucepan from heat and let cool. Whisk in soy sauce, tamari, vinegar, brown sugar, honey and wasabi powder. Add red pepper flakes (or to taste). Put Peanut Asian Slaw dressing in separate container and refrigerate as long as possible (it gets better as it sits) or until ready to use.
*makes about 2 cups (not all will be needed for the slaw- use according to taste preference).
*use asian slaw dressing to lightly brush burgers after grilling.

Peanut Asian Slaw Veggies:
Place all ingredients except peanuts in a large bowl. Toss the veggies with approximately 2/3 cups of the asian slaw dressing. Add peanuts and toss to combine.

Citrus-Wasabi Mayonnaise
Combine all ingredients in a small bowl and refrigerate at least 30 minutes (the longer it sits, the better the flavor).

Sumo Yumm-o Turkey Burger:
In a large bowl combine the turkey, scallions, carrots and red pepper flakes (try to handle as little as possible). In another bowl combine the wet ingredients: rice vinegar, soy sauce, tamari, eggs, peanut butter, garlic and ginger, whisk to combine. Add wet ingredients to the turkey mixture, making sure everything is incorporated and add the panko breadcrumbs (handle gently). Shape into 6- patties. Brush the patties with canola oil, season with salt and pepper. Grill approximately 6 minutes on each side (or until fully cooked), cover with aluminum foil and let sit 10 minutes. Lightly brush with excess Asian Slaw dressing.

Sesame Seed Buns:
Toast bun until the sesame seeds are golden.

To Assemble Sumo Yumm-o Turkey Burgers:
Spread approximately 1 tablespoon of the citrus-wasabi mayonnaise onto each half of a toasted bun. Place a turkey patty on top of the bottom half of the bun along with 1/3-1/2 cup of the Peanut Asian Slaw. Top with the other half.
