Succulent Salmon Surprise

Ingredients

Cheese Spread for Kaiser Rolls —
2 oz garlic & herbs spreadable cheese
1/2 avocado (mashed)
1/4 cup chipotle salsa
2 tablespoons chopped cilantro
1 tablespoon lemon zest
1/4 cup Chardonnay
Salmon Patties —
2 pounds salmon (flaked/ground)
1/4 cup chopped scallions
1/4 cup chopped jalapenos
1/2 cup roasted red bell peppers
1 cup bread crumbs
4 ounces sour cream
1 cup finely shredded cheddar cheese
1 teaspoon red cayenne pepper
1 teaspoon garlic powder
1 teaspoon ground black pepper
1 teaspoon seasoned salt
Vegetable oil, for brushing grill rack
Butter spray, for spraying patties
6 soft Kaiser rolls, split
6 romaine lettuce leaves
12 cucumber slices (cut on angle)

 

Instructions

To make the spread for the Kaiser rolls, combine the spreadable cheese, mashed avocado, salsa, cilantro, lemon zest, and Chardonnay in a mixing bowl; cover and set aside. To make the patties, combine the salmon, scallions, jalapenos, roasted peppers, bread crumbs, sour cream, cheddar cheese, and spices in a large mixing bowl. Mix ingredients lightly together. Divide the mixture into 6 equal portions and form the patties approximately 4-5 inches in diameter to fit the Kaiser rolls. When grill is ready, brush the grill rack with vegetable oil. Spray the butter spray on both sides of patties for color. Place the patties on the rack, cover and cook approximately 6-7 minutes on each side (turning only once). Remove from grill onto a plate. To assemble, spread a generous amount of the cheese spread over the cut sides of the rolls. On each roll bottom, place a lettuce leaf, a patty, and 2 cucumber slices. Add the roll tops and serve.
