Stuffed Onion & Pepper Burger

This is a burger I came up with about a year ago, I grew up with my mother making burgers mixed with peppers and onions but the problem was that they were always burnt on the outside and raw in the center, This burger will come out perfect every time, with a little suprise in the middle.


1/2 Lb bacon
4 cloves of garlic
2 tbs hickory liquid smoke
2 tbs soy sauce
1/2 cup of kenns honey mustard
2 onions (chopped)
2 peppers (green & red)(Chopped)
1 1/2 Lbs Ground Beef
1/2 lb Ground Chourico
3 cloves of garlic
pinch of salt
pinch of pepper
6 slices cheese (American)
Vegetable oil (for grill)
6 fresh Portuguese Sweet Bread rolls or Kaiser rolls


Preparing Filling Dice the bacon and fry in a sauté pan on either the side burner or on the grill itself on a medium heat,for about 5 min, remove bacon and place onto a paper towel, Remove most of the oil from the pan but keep a thin layer covering the bottom of the pan, Add liquid smoke, soy sauce, garlic, and honey mustard. Add peppers and onions, Coat evenly, cover, and cook on a medium heat, When the peppers and onions are soft (08-12min) remove the cover, add the bacon and reduce the liquid (6-10min) Remove filling from the pan and put into a bowl, let cool,and keep the the sauce left in the pan and let cool, Preparing Patties Combine Beef, Chourico, Garlic, Salt & Pepper into a mixing bowl Separate mixture into 6 equal portions, Separate each portion again, take 3/4 and flatten onto the wax paper take the remaining 1/4 and flatten, Place a piece of cheese in the center of the first patty, place filling on top of the cheese and the remaining patty on top of the filling, fold the edges of the bottom patty onto the top patty, Repeat Place each patty into the pan and brush with a coat sauce, Grilling Heat grill up to a med-high heat, Using a small clean white towel dipped in oil to coat the grill, place patties into the grill and cover, cook for 3-5min then turn patties 90 degrees cover for another 3min, flip and repeat, Serve Serve on a fresh Portuguese Sweet Bread roll or Kaiser roll


May look plain when you first see it but there is nothing plain about this burger after the first bite
