Stuffed Chipotle Fajita Burger with Cilantro Lime Mayonnaise


3 1/2 lbs. Fresh Ground Chuck
1 tsp. dried Oregano
1 tbs. Worcestershire sauce
1 tbs. Adobo seasoning
1/2 tsp. Dried Ancho chile powder
1 1/2 tsp. Cumin
1 tsp. Fajita seasoning
1 1/2 tps. Sazon complete seasoning I use Badia brand reserving 1/2 tsp. for Cilantro lime sauce
1 Chipotle pepper in adobo sauce chopped
1 tbl.Tabasco Chipotle pepper sauce
6 oz. Colby Jack Cheese in 1 oz slices then broken in chunks
Bell Pepper & Onion topping:
1 1bs. Vegetable oil
1 Green bell pepper
1 large yellow onion
Cilantro lime Mayonnaise:
1/2 c. Mayonnaise
1/2 c. Sour Cream
3 tbs. Fresh Lime Juice
3 tbs. Fresh Cilantro
1 tbs. Green onion or 2 Whole Green onions
1/2 tsp. Complete seasoning (Badia Brand)
1 Pinch of Salt
1 Pinch of Pepper
Toppings for Rolls:
1 Large Hass Avocado mashed
1 Large Tomato
6 Corn meal topped Kasser rolls


Preheat gas grill to medium high heat. Slice bell pepper and onion and set aside. Place 10 in cast iron skillet on BBQ to preheat, chop Chipotle pepper into small dice, start mixing the Ground chuck with Oregano, Worcestershire sauce, dried Ancho chile powder, Cumin, Fajita seasoning, 1 tsp. Sazon complete seasoning, chopped Chipotle pepper, Tabasco Chipotle pepper sauce, Divied meat into 6 oz balls then dived each ball into half form patties the same size, Cut Colby Jack cheese into 1 oz cubes then break into chunks, lay chunks on top of 1 patty lay another patty on top sealing the edges very well to keep cheese from leaking out while grilling, place on grill and cook to medium meanwhile add the oil to preheated skillet then add the Bell pepper and Onion saute until they just start to soften. To prepare the Cilantro Lime Mayonnaise chop Green onion and Cilantro mix with Mayonnaise, Sour cream, lime juice, , 1/2 tsp. Complete seasoning, Salt & Pepper, Peal and mash avocado, slice Tomato, toast buns on grill, top with avocado, Tomato, Grilled Pepper & Onions on top roll & Mayonnaise on the other place patty on top of Pepper & Onion top with remaining roll eat and enjoy !!!!!


I was born and raised in California and moved to Wisconson 7 years ago, I love Mexican food and living in central Wisconson there isn't very much good Mexican food so I am always trying to come up with something different to satisfy my craving for good food. I came up with this burger and my family and friends just love it, I hope you will to !
