Stilton Southwest Burger

This burger was inspired by the love my husband and I have for chipotle and blue cheese, chipotle mayonnaise and avocados.


Burger Ingredients:
2 lbs. ground brisket
3 Whole Chipotle in Adobo Sauce
7 oz. Stilton Blue-Veined Cheese
2 Tablespoons Southwest Chipotle Seasoning
½ teaspoon Salt
Chipotle Mayonnaise:
2 cups Mayonnaise
3 Whole Chipotle in Adobo Sauce
Burger Topping:
1 head Red leaf lettuce
2 Avocados - chopped
2 cups French Fried Onions
6 Large Sesame buns


Step 1 Make the Patties 1. Place ground brisket in a large mixing bowl and set aside. 2. With a hand blender, puree the whole chipotle. 3. Trim any hard areas of stilton off and then slice cheese ¼â€Â thick, and then crumble. 4. In large mixing bowl with brisket, add chipotle puree, stilton, chipotle seasoning and salt. 5. Mix all ingredients together until well blended. 6. Divide meat mixture into six – 6½oz balls. Flatten balls to form patties and push your index finger into the middle of the patty then set aside on a platter. Continue making the rest of the patties. Set aside. Step 2 Make the Chipotle Mayonnaise 1. In medium bowl, combine mayonnaise and 4 whole chipotle in adobo sauce. 2. With hand blender, puree until well blended. 3. Place in refrigerator until you are ready to spread on buns. Step 3 Make the Lettuce Slaw Topping 1. Finely chop 1 head of red leaf lettuce (pre-washed), place in a medium bowl. 2. Peel and dice avocado’s and add to lettuce. 3. Add two cups of  French Fried Onions. 4. Add 1 cup of chipotle mayonnaise and toss until well coated. (Toss right before you serve the burgers so the lettuce doesn’t wilt.) Step 4 Grill the Patties 1. Spray grill with non-stick BBQ Spray before you pre-heat gas grill to 425° F 2. Place patties on grill and cook for 5 minutes – close lid. 3. While patties are cooking, make the chipotle mayonnaise. 4. Turn patties once and cook for 4 more minutes. (These will be medium to well.) 5. After two minutes, put buns on grill and let cook for 2 minutes or until toasted. 6. Remove patties and buns. 7. Put chipotle mayonnaise on both sides of bun. Put patty on bun and top with lettuce slaw. 8. Serve immediately. Enjoy!


You can add some additional french onions on top to give more crunch.
