Spyro Gyro Burgers

Ingredients:

Olive Tapenade

1 C each black and green olives, pitted
¼ C sundried tomatoes, packed in oil, drained
2 cloves garlic
1 anchovy
2 T Italian Seasoning
Juice of ½ lemon
¼ C extra virgin olive oil

Tzatziki Sauce

I C Greek Yogurt
1 English Cucumber, peeled, seeded and chopped
1 garlic clove, minced
I large tomato, chopped
¼ cup roasted red pepper from a jar, chopped
1/4 C crumbled feta cheese

Beef mixture:

1 ½ lbs. Ground beef
¼ C Worcestershire sauce
1 T black pepper
1 C minced onion

Lamb mixture:

½ lb. ground lamb
¼ C minced onion
1 clove garlic, minced
½ t dried thyme
½ t dried oregano
1 T fresh lemon juice

2 loaves Italian bread, cut into thirds and halved lengthwise
10 cloves of garlic, crushed
olive oil cooking spray

Instructions:

Olive Tapenade:

Place first 6 ingredients into a food processor and gently pulse; gradually adding the olive oil through the feed tube until olive oil is completely incorporated and mixture is still slightly chunky.

Cover and refrigerate. Can be done 1 day ahead.

Tzaziki Sauce:

Place yogurt into a strainer lined with cheese cloth. Place the strainer over a bowl to allow the liquid to drain out. Let stand for 1-2 hours. Move the drained yogurt to a glass bowl and mix in the remaining ingredients. Cover and refrigerate.

Mix the ingredients for the beef mixture together and separate into 6 equal portions. Take each portion and roll it into a long, thin rope (approx. 6″). Repeat the same procedure for the lamb mixture (rope will be thinner.) Taking one portion of beef and one of lamb, pinch together at one end, and roll into a spiral with the lamb on the inside of the spiral. Lightly press to make sure burger will stay together.

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. Once grill is heated spray liberally with Pam for the Grill.

Place the spiral patties on the grill and cook, turning once. Cook approx. 5 minutes on each side.

Spray the sliced Italian bread with olive oil spray and rub with crushed garlic. Discard the garlic cloves. Place the cut side down on the grill until lightly toasted or approx. one minute.

To assemble the burgers, spread the bottom slice of bread with the olive tapenade, add the burger spiral, top with Tzatziki and the other bread slice.
