Spicy Southwest Burger

Ingredients

Spicy Glaze
1 cup ketchup
2 tbs brown sugar
1 tbs chili powder
1 tsp cumin
1 tbs mustard
1 tsp Worcestershire
¼ c white wine vinegar
3 chipotles in adobo sauce
¼ cup strong brewed coffee
1 tsp salt 1 tsp pepper
Spicy Onion Relish
1 Spanish onion – sliced
1 tbs olive oil
1 tbs brown sugar
1 tsp salt
1 tsp pepper
2 tbs beef broth
1 cup spice glaze
1 tsp chili powder
1 tsp chipotle hot sauce
 1 tbs white wine vinegar
White Guacamole
1 roasted poblano chile – finely diced
2 clove garlic, mashed
juice of 1 lime
2 avocados, mashed
¼ c red onion – finely diced
¾ cup mayonnaise
¼ cup sour cream
6 dashes green hot sauce
 2 tbs flat leaf cilantro
2 tsp salt
1 tsp pepper
Tortilla strips
3 flour tortillas
oil for frying
chipotle powder
1 tsp salt
Burgers
2 lb ground chuck
1 tbs grill seasoning
1 tbs chili powder
1 tsp cumin
5-6 dashes chipotle hot sauce
 2 tsp salt
2 tsp pepper
Assembly
Oil for grill
6 sesame buns, toasted
6 slices pepper jack cheese
2 cups shredded iceberg lettuce
6 slices tomato

 

Instructions

Directions For the glaze: In saucepan, add all ingredients. Simmer for 1 hour. For the spicy onions: In sauté pan, heat olive oil Add onions and sugar. Season with salt and pepper. Cook until onions begin to caramelize – about 20 minutes. Add remaining ingredients and simmer until mixture slightly thickens. Remove from heat. Bring to room temp. For the white guacamole Roast poblano chili. Put in plastic bag and let steam for a few minutes. Meanwhile, mince garlic. Put a pinch of salt on the garlic and mash with knife. Put garlic in bowl. Mash avocado. Sprinkle with some of the lime juice. Add avocado to bowl. Remove pepper from bag and remove the skin. Finely dice the pepper and add to the mixture. Add remaining ingredients to bowl. Adjust seasoning with salt and pepper as needed. Cover and refrigerate until needed. For Tortilla strips cut tortillas in half. Cut halves into strips. Fry in oil in batches. Immediately add the chipotle powder and salt. Set aside until needed For patties In bowl, add all ingredients. Mix only until combined. Form into 6 patties. Cover and chill until needed. Right before putting on grill, apply salt and pepper. To cook patties Prepare grill – Brush oil over grill. When grill is ready, put burgers on. Cover. Cook for 4 min. Turn over and apply spicy sauce very liberally. Cook 4 mins covered, reapplying sauce often. Turn burger over again and apply sauce. Cook for 1 min re-applying sauce. Add pepper jack cheese to each burger. Remove from grill. Toast bun on grill. To assemble the burgers – Apply white guacamole on top of bun. Add lettuce and tomato. On bottom bun, place burger patty. Top with spicy onion relish. Put a small handful of the tortilla chips on top. Put top of bun on and enjoy. Makes 6 burgers
