Spicy Soul burgers

Pairs well with:

White Zinfandel

With strawberry and melon essences, this American original is perfectly at home with however you like to unwind.

Ingredients

7 oz can chipotle chili peppers in adobo sauce
1 15 oz can black eye peas, rinsed well and drained
2 cloves fresh garlic, minced
4 tablespoon extra virgin olive oil
1/2 teaspoon kosher salt
1/4 cup fresh chopped cilantro
3 green tomatoes, sliced1/2 inch thick
3/4 cup yellow corn meal
1/2 teaspoon seasoning salt
1/4 tsp ground red pepper
Canola oil
2 pounds ground chunk
4 scallions, chopped
2 cloves garlic finely minced
2 teaspoons Cajun seasoning
1/4 cup Cabernet Sauvignon
1/4 cup fresh chopped parsley
1 teaspoon kosher salt
12 slices Thick cut bacon
6 whole wheat Hamburger buns
6 slices provolone cheese
6 red leaf lettuce leaves

 

Instructions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.

To prepare the patties: In a large bowl gently combine the beef, scallions, garlic, Cajun seasoning, Cabernet Sauvignon, parsley, and salt until just mix together. Divide the mixture into 6 portions and shape each portion into patties that fits the size of the bun. Loosely cover with plastic wrap and set aside.

To make the hummus: Combine chipotle chili peppers (with sauce) , black eye peas, garlic, olive oil, kosher salt, and cilantro in a bowl of a food processor and blend until smooth. Place in a medium bowl. Cover and set aside.

Heat a large, heavy fire-proof skillet on the grill. Add the bacon and cook until crisp. Transfer to paper towels to drain. Wipe out the skillet with a piece of paper towel. Add 1 inch of canola oil and allow to get hot. Mean while, combine cornmeal, seasoning salt and pepper in a small bowl. Dredge tomatoes in cornmeal mixture. Add tomatoes to the hot oil and fry over medium-high heat until browned. Turn once. Drain and cool on a paper towel.

Place the patties on the rack, cover, and cook, turning once, until done , 5 to 7 minutes on each side for medium doneness . During the last few minutes of cooking, place the buns , cut side down, on the outer edges of the rack to toast lightly. During the last minute of cooking, top each patty with a slice of provolone cheese.

To assemble the burgers: place the patties on the bottom half of each hamburger bun. Top each pattie with two fried green tomato slices, followed by 2 slices of bacon, leaf lettuce. Spread the top part of the bun with a thick smear of the hummus.
