Spicy Orange Cumin-Crusted King Burger

This burger is fit for a king. The cajun taste with a relish made out of oranges, red peppers,olives, onion, is an irrestible burger.


1 1/2 pound ground chuck
2 to 3 medium oranges
1 - 1/2 teaspoons ground cumin
1 teaspoon salt
3 tablespoons dry bread crumbs
1 egg
3 green onions chopped
1 tablespoon Cajun seasoning
1 tablespoon prepared mustard
4 slices of monterey jack cheese
1/2 teaspoon pepper
1 jar (7 ounces) roasted red peppers, diced
1/3 cup coarsely chopped Kalamato olives
1/3 cup diced red onion
12 strips of bacon
4 sesame seeded hamburger patties


Grate 2 teaspoons orange peel from oranges; reserve oranges. Combine orange peel, cumin and salt in small bowl; remove and reserve 2 teaspoons seasoning for relish.Prepare a medium- hot fire in a charcoal grill wiht a cover, or preheat a gas grill to medium high. To make crispy bacon, place the bacon in a cold cast-iron skillet in a single layer. Place the skillet on the grill to heat. Cook the bacon until golden brown and crispy. Remove the bacon from the pan to a paper towel-lined tray to drain. Remove the skillet from the grill. In a medium bowl, mix the ground chuck, bread crumbs, egg, green onions, 1 tablespoon Cajun seasoning, and mustard. Form into 4 patties. Add pepper to remaining (orange peel, cumin and salt) seasoning; press evenly onto the patties. Lightly oil the grill grate, and cook the patties 5 minutes per side, or until done to your satisfaction. The last minutes of cooking, place the buns around the edges of the grill, cut sides down, and toast just until colored. Place a slice of cheese on each burger, and allow to melt. Meanwhile peel and dice enough reserved oranges to measure 1-1/2 cups. Combine diced oranges, red peppers, olives, onion and reserved 2 teaspoons in medium bowl; mix well. To assemble the burgers, place the patties on the bottom of the buns. Arrange the relish on top of the cheese and than the bacon. Last put the bun tops on and its ready to eat.
