Smokin Caesar Burger

A custom Burger using readily available ingredients to make a Nationaly loved favorite!It’s a play on a Caesar Salad which my three sons enjoy so much! Homemade Caesar Dressing and Caesar ingredients incorporated in to the ground beef result in a Smokin Great Flavored Burger!

Ingredients:

Dressing
2 egg yolks
2 Tbls. Dijon mustard
6 cloves garlic chopped and divided
2 flat anchovies smashed and chopped with a pinch of salt
2 tsp Tabasco Chipotle Sauce
1 lemon juiced
1/2 Tbls Lea and Perrins
1/2 cup microplaned parmesan
1/2 cup Colavita Evoo
1/2 cup canola oil
Beef
2lbs Ground beef
1/2 the chopped garlic
2 tsp Tabasco Chipotle Sauce
1 tsp pepper
1/8 cup of prepared dressing
2 heads shredded Romaine
6 sesame burger buns

Instructions:

Prepare dressing first;
combine in a large bowl
2 warmed egg yolks, the dijon mustartd, half the chopped galrilc, the mashed and chopped anchovies, the Tabasco Chipotle Sauce, the lemon juice, the Lea and Perrins and the parmesan cheese. Whisk well. Combine the oils in a 2 cup measure, then while whisking constantly slowly stream in the oils until blended. Set aside into your 2 cup measure and make up your buger patties.

Take your ground beef and break up into a bowl, add the other half the garlic, the Tabasco Chipotle Sauce, the pepper and 1/8 cup of the dressing. Combine gently and the form into six patties.

Heat grill on medium high, put on patties and grill for 3-4 minutes per side. While patties are cooking wash and dry the romaine chop it into ribbons and toss gently in 1/2 to 3/4 cup of the dressing.

Brush Colavita olive oil onto the buns and warm on grill, remove and assemble your burgers by placing burger on bottom bun, then a layer of salad, then spread a dallop of dressing on top bun and set at a jaunty angle against the bottom so your salad and burger show!
