Sim Sim Salabim!

Zinfandel

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Ingredients

1 1/2 teaspoons garam masala
1 tablespoon chopped fresh ginger
1 cup packed fresh cilantro leaves
2 tablespoons plus 1/2 cup mayonnaise
2 tablespoons fresh lemon juice
1 large egg
1 1/2 teaspoons kosher salt
1/2 cup panko crumbs, plus a little extra if needed
2 pounds fresh Tuna, minced
1/2 cup packed fresh mint leaves
2 jalapeño peppers, seeded, minced
2 bananas peeled, diced
1 cucumber peeled, seeded and diced
1/4 cup chopped green onion
1 lime, juiced
1/2 cup red bell pepper, seeded and diced
1/4 teaspoon cardamom
1 teaspoon honey
Vegetable oil for brushing the grill
6 split sandwich buns
3 cups shredded iceberg lettuce

 

Instructions

For the Salabim Burgers: To the bowl of a food processor add the garam masala, ginger, 1/2 cup of the cilantro, 2 tablespoons mayonnaise, 1 tablespoon lemon juice, the egg, 1 teaspoon salt. Pulse until combined. Transfer to a large bowl and fold in the panko and the tuna. Mix until thoroughly combined. The mix should just hold together, if necessary add a little extra panko crumbs. Form into 6 patties, put on a clean plate, loosely cover with plastic wrap and refrigerate for at least 30 minutes. For the Indian spiced mayonnaise:Coarsely chop the mint and the remaining cilantro. Add it to a small bowl with 1/2 of the minced jalapeño, the remaining lemon juice and the remaining mayonnaise. Stir until combined, cover and refrigerate until needed. For the Sim Sim Salsa: add the bananas, cucumber, green onion and lime juice to a large bowl. Toss to coat. Add the remaining jalepeno, red bell pepper, cardamom, honey and the remaining 1/2 teaspoon kosher salt. Mix well, cover and refrigerate until needed. Preheat a gas grill to medium high heat. Brush the grate with oil and place the Salabim burgers on the hot grill, cover and grill for about 3 minutes, turn the patties and grill for an additional 2 minutes. Remove the burgers while they are still slightly rare, place on a cookie sheet and cover with foil to finish cooking while you toast the buns. Place the buns on the grill, cut side down, to toast slightly, about 1 to 2 minutes. To assemble the burgers: spread a generous amount of the Indian spiced mayonnaise on the cut sides of the buns. To each bun bottom add 1/2 cup shredded lettuce and a burger. To the top of each burger add an equal amount of the Sim Sim Salsa and a bun top. Server warm
