Seven Layer Salad Bacon Cheeseburger
This is a great local American burger because in the midwest a summertime potluck picnic or family reunion isn't complete without a "seven-layer salad". This retro salad is making a comeback in a variety of delicious ways. I hope you'll enjoy the classic bacon cheeseburger and salad combo in it's new and improved form.
Pea, Parsley and Mint Mayo
1/2 cup mayonnaise
1/2 cup green peas, fresh or frozen (thawed)
2 tablespoon fresh parsley
2 tablespoon fresh mint leaves
2 teaspoons lemon juice
2 teaspoons sugar
1/2 teaspoon salt
Pinch of black pepper
1 pound ground chuck
1 pound ground sirloin
1 small onion, finely chopped
3 tablespoons Worcestershire sauce
2 teaspoons salt
1 teaspoon pepper
1/2 cup shredded cheddar cheese
Vegetable oil, for brushing the grill rack
6 Kaiser rolls, split
2 cups fresh spinach leaves, stems removed
1 large garden fresh tomato, sliced into 6 slices
1 small red onion, sliced thinly
6 slices hickory smoked bacon, pre-cooked
Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
To make pea, parsley and mint mayo, in a food processor add mayonnaise, peas, parsley, mint, lemon juice, sugar, salt and pepper. Blend until a creamy consistency, transfer to a small bowl, cover and refrigerate until assembly.
To make patties, in a large bowl combine ground chuck, sirloin, onion, worcestershire sauce, salt, pepper and shredded cheese. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal sized patties.
Brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook 5-7 minutes, turning over once and continue cooking another 5-7 minutes or until done to desired preference. During the last few minutes of cooking, place rolls, cut side down, on the outer edges of the rack to toast lightly. Remove rolls and patties.
To assemble the burgers, spread equal amounts of the prepared mayo on the cut sides of the rolls. Begin building the seven layers with the bottom of the roll, add 5-6 spinach leaves, a tomato slice, onion slice(s), burger patty, and bacon. Add roll top and serve. Makes 6 fabulous burgers.
Can also easily be made into a party platter of 12 minis, using a smaller roll.
