Sausage and Beef burgers with Pineapple onion Jam

People who live in Minnesota have very little time during the year to use their grills-we take our burgers very seriously.This burger has just the right amount of sausage to make it extra juicy and flavorful. We take full advantage of the wonderful produce that is available to us in the summer, sweet onions and fresh herbs! I made these burgers for a big group at our Northern Minnesota cabin this weekend and everyone agreed-its a winner!!!!!!!

Ingredients:

4 tbs. Butter
3 large sweet vidallia onions
2 tbs. pineapple juice
2 tbs. fresh minced basil
1 cup firmly packed brown sugar
6 fresh or canned pineapple rings
11/2 tsp. dried red pepper
1 cup mayo
1/4 cup chopped pineapple
1 1/2 pound freshly ground chuck
1/2 pound freshly ground sausage
1/2 cup fresh unseasoned bread crumbs
2 tsp. sea salt
2 tsp. crushed black pepper
1/4 cup white zinfandel
1 cup loosely packed gorgonzola cheese
6 large kaiser rolls-split
olive oil, for brushing on the grill

Instructions:

Prepare a medium hot fire in a charcoal grill with cover or preheat gas grill to medium high.

To prepare jam , combine combine butter, onions, pineapple juice, basil and 1/2 brown sugar in a large non-stick fireproof pan. Cover with lid and let cook on grill rack for 20-30 minutes, stirring occasionally. When onions begin to caramelize, add pineapple rings,1 tsp red pepper and the rest of brown sugar-cook for an additional 10-15 minutes-set aside.

To make spread, combine mayo, chopped pineapple and remainder of red pepper-set aside.

To make patties, combine chuck, sausage, bread crumbs, salt , pepper, white zinfandel and cheese in large bowl. Handle meat as little as possible to avoid compacting, mix well. Divide the mixture into 6 equal portions and form into patties to fit into rolls.

When grill is ready, brush the grill rack with oil. Place the patties on the rack, cover, and cook, turning once, until done to desired preference, 5-7 minutes a side for medium. Meanwhile, place the skillet with jam on the outer edge of grill to warm. When patties are cooked, remove from grill, stacking to keep warm. Place the rolls, cut side down, on the grill and toast lightly.
To assemble burgers, spread desired amount of spread on the cut side of rolls. On each bottom roll, place patty. Spoon on desired amount of Jam on top of each patty. Add roll tops and serve. Makes large burgers.
