Rosemary Burger on Jalepeno Cheese Bun

Ingredients

Buns
1 1/2 cups water (110-115 degrees)
1 T. yeast
1/2 cup sugar
1 1/2 teas. salt
4 1/2 cups flour
1 cup chopped canned jalepeno slices
1 cup shredded cheddar cheese
Pickle mayo spread
1/4 cup chopped hamburger sliced dill pickles
1 teas. prepared mustard
1 cup mayonnaise
Meat
2 lbs. 80/20 ground beef
1/2 teas. ground black pepper
1 T. freshly ground fresh rosemary
2 T. Worcestershire sauce
1 1/2 teas. salt
Toppings
hamburger sliced dill pickles
6 slices 1015 onions, sliced about 1/4" thick or less
mayonnaise
Spray oil for grill and bowl

 

Instructions

Pre-heat grill to about 400 degrees with pizza stone or terra cotta tile large enough to hold six hamburger buns. I use a 15" pizza stone for this. Buns Mix sugar, yeast and water in 4 quart mixing bowl and let stand until it bubbles (about 3-5 minutes) Add 2 cups flour and mix well with electric mixer Add 1 cup coarsely chopped jalapenos and 1 cup shredded cheddar cheese Add 2 ½ cups flour and knead with electric mixer using dough hook for 3 minutes Turn mixture into an oiled 4 quart bowl and let rise for 50 minutes Sprinkle some flour onto cutting board and turn dough onto board Spread the dough out to about 3/4 inch thickness with hands on a floured board Using 5" round pastry cutter, cut 6 buns from the dough (just like cutting biscuits) Let rise for 30 more minutes. Fifteen minutes before end of rising time, place 15 or 16 inch pizza stone on covered gas grill. Pre-heat grill to 400 degrees and bake buns for 15 to 20 minutes or until they sound hollow when thumped. Set aside to cool. Remove pizza stone from grill with hot pads. Mayonnaise Pickle Spread Finely chop dill pickle slices Mix dill pickle slices and mustard into mayonnaise Refrigerate until needed. Patties Place 2 lbs. Ground beef in large mixing bowl Add thyme and rosemary, salt and pepper and Worcestershire sauce Take two knives and cut the seasonings into the meat until meat is in approximately one inch cubes. Then mix very briefly with hands. Divide meat into six lumps and form patties about ½ to 3/4 inches thick. Cook on grill preheated to about 400 degrees – about 6 minutes on each side. Assembly Just before patties are done, slice buns with a serated bread knife into a top part and a bottom part. Spread a heaping teas. mayonnaise on cut side of each bottom and each top of buns. Place cut side down on hot grill for about 5 minutes or until edges begin to toast a little. Spread mayonnaise pickle spread on cut side of each bun half. Place meat patty on the bottom half of each bun. Top each patty with 7 slices dill pickle, then a large slice of onion. Place top part of buns on top.
