Roonies Southwestern Turkey Burgers

You won’t need a bouquet of flowers when you share our Pinot Grigio. This crisp wine with floral aromas is a wonderful way to make an entrance.

I love the Southwestern Eggrolls from Chili’s.Only problem is they are just an appetizer. I wanted to find a way to make it a meal. And what better way that to make it into a large juicy burger.

Ingredients:

Tortilla Strips:
48 oz Vegetable Oil
3 Soft taco size flour tortillas

Burger Patties:
1 Tbls Vegetable oil
2 Tbls Minced red bell pepper
2 Tbls Minced green onions
1/3 Cup Frozen sweet corn
1/3 Cup Drained and rinsed canned black beans
2 Tbls Diced canned jalapenos
1/3 Cup Chopped frozen spinach thawed and drained
1 1/2 Tsp Cumin
1 1/2 Tsp Chili powder
1/4 Tsp Salt
3/4 Cup Finely shredded cheddar cheese
1/4 Cup Plain bread crumbs
1 1/4 Lbs Ground turkey

Avocado Spread:
2 Small avocados
1/4 Cup Mayo
1/4 Cup Sour cream
1 1/2 Tsp White vinegar
1/2 Tsp Salt
1/4 Tsp Dried parsley
1/2 Tsp Onion powder
1/4 Tsp Dill weed
1/4 Tsp Garlic powder
1/4 Tsp Pepper

Non stick cooking spray for grills
6 Whole wheat hamburger buns
6 Tomato slices
6 Romaine lettuce leaves

Instructions:

In a large fireproof pot heat 48 oz of vegetable oil on grill or side burner (if available) on high. While oil is heating up cut flour tortillas in half and then into strips. Cook the strips approximately 5 minutes or until golden brown. Drain on paper towel lined plate and let cool.

To make patties heat vegetable oil in fireproof skillet over medium heat. Saute minced red bell pepper and green onions a couple of minutes. Add frozen corn, black beans, jalapenos, and spinach. Cook for 3 minutes longer. Add cumin, chili powder, and salt. Mix thurougly. Next add the shredded cheese and bread crumbs. Mix together and let cool 5 minutes. In a large bowl combine the ground turkey and the mixture from the skillet. Mix until well blended. Divide the mixture into 6 and form patties.

While burgers are resting make the avocado spread. In small food processor combine avocados mayo, sour cream, white vinegar, salt, dried parsley onion powder, dill week, garlic powder, and pepper. Pulse until mixed well. Set aside.

After spraying the grill with cooking spray heat grill to medium. Place burger patties on grill and cook approximately 15-20 minutes or until done.

Place buns on grill durring last 2 minutes of cooking time to lightly toast.

To assemble the burger, spread 1 1/2 Tbls of the avocado spread on the bottom half of the bun. Next top with 1/6 of the tortilla strips. Place 1 patty followed by a slice of tomato and lettuce leaf. Finally top the burger with the top bun. Repeat until all 6 burgers are assembled. Serve immediately.
