Rockin’ Rumsey Turkey Burgers

Ingredients

2 lbs ground turkey, it's best not to use the leanest turkey or the burgers will be dry.
1 small onion, finely diced
4 cloves garlic, peeled and finely minced
1 small red pepper, finely diced
8oz (1/2 bag) fresh baby spinach,roughly chopped
1/4 cup extra virgin olive oil
1/2 tsp salt
1/2 tsp freshly ground black pepper
6 whole grain buns
2 large, ripe tomatoes, sliced into 1/4 inch slices
1 bunch red leaf lettuce, washed and dried
6 slices Monterey Jack cheese

 

Instructions

Pour 2 Tbsp olive oil in large saute pan and place over medium heat (reserve remaining oil for brushing on buns)for 2 minutes. Add onion and garlic and reduce heat to medium/low and saute for 2-3 minutes or until onions start to become translucent. Add red pepper saute another 2 minutes. Add spinach and saute until completely wilted, approx. 2 min. Remove from heat and set aside to cool slightly. In a large mixing bowl place ground turkey, salt, pepper and onion/spinach mixture. Using your hands combine thoroughly to make a homogeneous mixture. Form mixture into 6 burger patties, each will be approx. 5 inches in diameter and 1/2 inch thick. Place burgers on a cooking sheet lined with waxed paper or sprayed with cooking spray and place in refrigerator for atleast 1 hour. 45 min. prior to planned meal time start grill and heat on high for 10 min. If using charcoal light coals atleast 1 hour prior to planned meal time. When grill is hot rub grates with oil or use grilling spray to prevent sticking. Reduce heat to medium and place patties on grill. Grill for approx 5-7 min per side or until an instant read thermometer reads internal temp of 165 degrees. Place cheese on burgers for last min or just until melted. Remove burgers and place on platter. Brush each cut side of buns with remaining olive oil and place on grill cut side down and grill for 1 min or until toated and slightly browned. Place burger patties on buns and top with tomato slice, lettuce and preferred condiments.
