Roasted Red Pepper Burgers with Feta Mint Mayonnaise

2 tablespoons olive oil
1 onion, finely chopped
5 cloves garlic, minced and divided
2 pounds ground chuck
4 red bell peppers
2 tablespoons chopped fresh mint, divided
1 tablespoon cumin
1 teaspoon cayenne
1 teaspoon salt
1 egg, beaten

6 large soft Kaiser rolls
6 leaves Romaine lettuce
6 ½ inch slices large tomatoes
6 tablespoons Dijon mustard
¼ cup mayonnaise
¼ cup crumbled feta cheese

Vegetable oil for greasing grill racks.

 

Instructions

Prepare a greased and cleaned grill to medium high heat.

In a medium skillet and over medium high heat, saute the onion and 4 cloves minced garlic in the olive oil for 3 minutes. Stirring continuously.

Place the red peppers on the grill and roast until the out skin begins to blister. Remove the red peppers from the grill to a ziplock plastic bag for 2 minutes. Remove the roasted skin from the peppers, cut each pepper into 4 large slices and discard the seeds and veins. Discard the roasted pepper skin.

In a food processor, puree 10 slices of the roasted red peppers (reserve the remaining 6 slices). In a large mixing bowl, combine the ground chuck, pureed red peppers, 1 tablespoon chopped fresh mint, sauted onions and garlic, spices (cumin, cayenne, and salt), egg and any remaining pepper drippings remaining in the ziplock bag. Form into 6 patties to fit the Kaiser buns.

Brush the grill rack with oil. Place the patties on the rack, cover, and grill until browned on the bottoms, 3 to 4 minutes. Turn the patties and continue grilling until the desired degree of doneness, about 5 minutes longer for medium. When the patties are cooked remove from the grill and cover with foil to keep warm while preparing the burgers.

In a small bowl, mix together mayonnaise, 1 clove minced garlic, 1 tablespoon chopped fresh mint, and feta cheese.

During the last 2 minute of grilling, grill the sliced tomatoes for 1 minute per side and set aside.
Place the rolls on the outer edges of the grill, cut side down and toast lightly.
To assemble the burgers, spread a generous amount of the Dijon over the cut side of each bottom roll. Spread a generous amount of the Feta Mint Mayonnaise on the cut side of the top roll.
On each roll bottom, place a beef patty, a grilled tomato slice, a roasted pepper slice, and a romaine lettuce leaf. Add the roll tops and serve.
Makes 6 burgers.
