Roasted Peanut Turkey Burgers with Jalapeno Cucumber Pickles & Cilantro Aioli

Hello, Thank you for the opportunity to enter the Build a Better Burger contest. I am always looking for that perfect flavor combination when using ground turkey. Loving spicy food, cilantro and peanuts gave me the inspiration to create this recipe. I have had a great time preparing to enter the contest! Connie, Phoenix, AZ


2 cups ground roasted salted peanuts
1 1/2 pounds ground turkey
6 fresh garlic cloves, minced
4 tablespoons mayonnaise
3 tablespoons molasses
1/2 teaspoon sea salt
1 teaspoon fresh ground black pepper
Jalapeno Cucumber Pickles
3 tablespoons honey
1 cup rice wine vinegar
1 teaspoon fresh ground black pepper
1/4 teaspoon sea salt
2 jalapeno chiles, medium size, seeded, julienned
1 large cucumber, thinly sliced
1 small red onion, thinly sliced
Spicy Cilantro Aioli
2/3 cup mayonnaise
1 cup lightly packed cilantro leaves
1/2 teaspoon fresh ground black pepper
1/4 teaspoon sea salt olive oil, for brushing on the grill rack
6 pepper jack cheese slices to fit buns
6 whole wheat hamburger buns, split


Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To prepare patties, using a 10-inch nonstick fire-proof skillet, roast the peanuts over medium-high heat, stiring constantly to avoid burning. Once the peanuts are roasted to a golden brown, pour peanuts into a food processor and chop to a medium grind. Combine ground peanuts, turkey, garlic, mayonnaise, molasses, salt and pepper in a large bowl, mix well. Divide the mixture into 6 equal portions and form the portions into patties to fit the buns, set aside. To make jalapeno cucumber pickles, combine honey, vinegar, salt and pepper in a medium size bowl, mix well. Add jalapenos, cucumber and onion, mix well and set aside. To make cilantro aioli, combine mayonnaise, cilantro and pepper in a food processor, puree and set aside. Brush grill rack with the olive oil. Place patties on the rack, cover and cook, turning once, about 4 minutes on each side. During the final minutes of grilling the patties, place 1 slice of cheese on each patty. Place the buns cut side down on the outer edges of grill rack to toast lightly. To assemble burgers, spread a generous amount of cilantro aioli over each bun bottom, a patty and an equal amount of jalapeno cucumber pickles. Add tops of buns and serve. Makes 6 burgers
